Bikini Body Breakfast Recipes
I have been dying to get some more variety of morning meals and in my search I found these over at She Knows!!! Please share any that you may have:)
-- Summer Berry Smoothie --
Serves 1
Ingredients:
1 cup fresh strawberries, sliced 1/4 cup blueberries 1 (6-ounce) container plain yogurt 1/4 cup orange juice 1 cup ice cubes
Directions: 1. Combine all ingredients in a blender and blend until smooth.
2. Pour into a large glass and garnish with strawberry slices and blueberries.
-- Summer Muesli --
Serves 4
Ingredients: 2 cups rolled oats 1 cup low-fat milk 1 tablespoon honey 1 to 2 peaches, peeled and grated 1/4 cup chopped pecans 1 cup low-fat yogurt
Directions: 1. Combine oats, milk and honey in a bowl and let soak in the refrigerator overnight.
2. When ready to eat, top oat mixture with peaches, pecans and a dollop of yogurt.
-- Summer Squash Quiche --
Serves 6 to 8
Ingredients: 1 (12-inch) whole wheat pie crust in a pie plate 1/2 red onion, diced 1 large shallot, diced 2 tablespoons olive oil 1 medium summer squash or zucchini, sliced 1 cup grated Gruyere cheese 1/4 cup crumbled feta cheese 2 tablespoons fresh thyme leaves 2 eggs 3/4 cup half-and-half Salt and freshly-ground black pepper, to taste
Directions: 1. Preheat oven to 375 degrees F. Place pie crust on a baking sheet.
2. Sauté red onion and shallot in olive oil until soft. Mix in squash and cook a few minutes until soft. Spoon vegetable mixture into the bottom of the pie crust.
3. Top vegetables with cheeses and sprinkle with thyme.
4. Combine eggs and half-and-half in a bowl and whisk well. Season with salt and pepper. Pour mixture over vegetables.
5. Bake for 45 minutes or until set and golden brown. Serve warm or let cool and refrigerate.

Comfort & Joy!
RECAP OF SATURDAY MORNING
I went to AKB yesterday and burned like a million calories! My total HBBC points 37.75 to this day, Michael is an amazing teacher and always pushes my body to the limit. When I got home I made another breakfast cookie, but this time I use banana protein powder, it was perfect!
SHOP TILL WE DROPPED
After breakfast hubby and I set off for a full day of shopping ( don't I have the best HUBBY)for Christmas presents. Hubby did not have breakfast, so of course I had a LARABAR stashed in my purse for him. He tried the Gingersnap, ( I don't like ginger he loves it) he said that the bar needed 1.7oz less GINGER, in other words there was too much ginger in there for him.

The first outlet we went to was ok, we walked around for about 2 hours and then got some lunch at the ONLY eatery they had there. They had a lot of options, healthy and unhealthy. Everything looked really good. It was 3pm and we were FAMISHED. I still went with a lighter option, a Thai Wrap with Thai chicken, peanut sauce, jasmine rice, and cucumber salad all wrapped up in a whole wheat tortilla with a spa salad on the side. I could have just had the salad, it was so good ( I ended up eating only half the wrap). There was grilled squash and zucchini on top! They also had a FLAVOR bar, and if you don't know this I AM the CONDIMENT QUEEN! So I got some BBQ sauce and Cilantro dressing. I just dipped my wrap in them trying to avoid to many empty calories.
We only ended up getting two things at the outlets then took off to hit the next mall. O and while we were there, they had a buy one get on FREE Churro, so we just had to get one. This was by far the biggest and best churro I have ever had. The dough was gooey, warm, and sooo fresh.

Why would ANYBODY BUY THIS!!!!!

At the next mall we SCORED. We found some great gifts for the secret Santa exchanges in both sides of the family, and we got something PERFECT for the FIL! By the time we got to the last mall it was 7pm and we were started to drop, but we made it through got some great gifts for my brothers, my parents, and the hubby and I split up and did a little shopping for each other (I got some great stuff for him he's going to LOVE it!).
When we got home is was almost 9pm and we were SO ready to EAT! Thankfully the pot roast took 11 hours to cook so when we got home it was cooked to perfection. I am not a big red meat eater, actually I could probably live without it this meal was solely for the hubby who is a meat and potato kind of guy (he's from the south of course). This was my first time making Pot Roast (my NEW THING FOR THE DAY) , and it was successes the meat was so tender and the potatoes and carrots were not too soft, just done enough. We could tell the carrots were from the Farmers Market, they tasted do much better then the store bought. I wonder if I could slow cook butter nut squash??



After dinner hubby and I curled up on the couch watching the movie Jack Frost, but after about 30 minutes WE BOTH fell asleep and I woke up an hour later so disoriented...lol...LONG DAY!
SUNDAY MORNING BAKING
I woke up at 7am this morning ready to bake for my Christmas Cookie Exchange Party today. I just went ahead and baked the OOOO so amazing Oatmeal, Chocolate, and Pecan Cookies I made last week. Their so easy and stress free! Thank you all for the wonderful recipes and cookbook ideas! Maybe one day when I get a Kitchen Aid Mixer I will get more creative:) I also attempted at some of KATH's Baked Oatmeal Snack Bars, I didn't have banana chips or walnuts so I used craisens, raisins, and almond trail mix. I think this was a pretty good attempt; I have some great ideas for adding next time! I also had a little waffle banana and peanut butter sandwich on one of my NEW plates I got yesterday from Pottery Barn!




I am a little worried about the Cookie Exchange Party, I know it will be fun but ALL those cookies how do I NOT EAT THEM ALL!!! I will be drinking a lot of water and having a healthy lunch before I go to ward off any overeating!

A Cookie for Breakfast!
I mixed a little Kashi GoLean and some Granola. Topped off with 1/2 sliced nanner, and some PB!

Ok the bag that was posted last night that said "chocolate covered candy cane" was the coffee I purchased at the local coffee chop...lol...and it was wonderful. I will be buying coffee from them again! 
Last night I had decided to just sleep in today. I don't remember the last day I had a DAY OFF from exercise. I think it was LAST Wednesday so today will be that day, I am planning on walking a little on my break to get those points in for the HBBC,! My total points so far are 23.5.
Sense I had a little time on my hands this morning I baked up m version of the beautiful Fitnessistas breakfast cookie. I have been eyeing it for quite some time, and figured in honor of trying something NEW everyday this month I needed to try it.
Pumpkin Protein Pancakes
1/2 c oats
1/2 sliced banana
1/2 cup oats
1 egg
1/2 scoop vanilla protein powder
2 tbs skim milk
dash of pumpkin spice
handful of flaxseed
Directions: Mix all ingredients together in a bowl, then spread like a large COOKIE in a frying pan or griddle. Heat for 3-5 minutes on each side, eat and ENJOY!
This was so EASY and so yummers! It's a lot like a protein pancake that I have made minus the cottage cheese. I added a little almond butter to add some sweetness! I will be making more variations soon!

Well it's CAMPING DAY as we say at my gym. It's ONE more day until FRIDAY! I don't know why we say camping day...lol... Tonight we are going to the Farmers Market to watch some friends sing carols and have coffee with them after, can't wait! I love the Farmers Market, I need some fresh produce hope they have a good selection.

Black Saturday and Sunday Breakfast!
Went out shopping yesterday after my hour kickboxing class, I think I burned like a million calories after walking around for hours and hours. Good thing I had a McCormick McGriddle!
Kickboxing was intense I am going to post tonight about this GREAT workout!

I hit up the Mills out here, which has basically every store and if it's not there the you can go right across the way to the Victoria Gardens. I think I must look like an easy catch because yesterday I kept getting SUCKED in to all the kiosk people. The first one literally grabbed me, sat me down and kept saying " 10 minutes 10 dollars (in an Asian accent)". He wanted me to get a massage, I was set in saying no but then he insisted and I needed one so I caved in! lol....
I got some great deals and Old Navy, Gap, Bath and Body Works, and Marshall's. I started getting dizzy at around one O' Clock so I hit up the food court. I hit up the healthiest choice I could find and got a turkey apple salad minus the bacon. Instead of chips on the side I had a bowl of tomato soup. As I looked around the GINORMOUS food court I think I was the ONLY one eating a salad, a year ago I would have been eating Chinese food for sure.


It's so much fun shopping for other people, there is a joy that I find in finding that perfect gift. So what is the perfect gift? Well I think homemade things are wonderful, but I know my little bro's aren't down with me making them a scarf, so the perfect gift for them is something that they like that I took the time to pick out (like cloths and video games). There are a lot of perfect gifts out there, but is there a perfect gift for everyone?

Shopping was done around 5:30 and I still needed to hit up the grocery store, so I rushed off so I could make it home on time to make dinner. Before I rushed off I grabbed a small Strawberry Nirvana smoothie from Jamba, because I didn't want to go shopping on an empty stomach. I am glad I had a shopping list because my grocery shopping was painless. I finished around 7 and finally headed home!!!!
I wish I could have worn a pedometer, I think I must have walked like 30 miles! When I got home I showed hubby all my fun finds, and he was thrilled. He was also in the middle of a MAJOR organization project in the garage, Mr.OCD! lol.... Here is a picture of the things that I got for FREE! I didn't purchase anything for myself, just took advantage of some freebies.



From the left 4 place mats out of the 8 I purchased at Pottery Barn (only 1.50 a piece), by 4 get 4 FREE and I had a 20% off coupon that I printed online! Ok the little Sbux cup wasn't free but it was only a dollar at the Sbux overstocked store. The Apple Blossom lotion was one out of the two I got for free by 3 get two free at Bath and Body Works. I also had a coupon for a free gift with purchase so I picked out the Spiced Cider plug in fragrance ( it's plugged in and making the entire living room smell delicious!). Lastly the Holiday Treat Kits( BORDERS), buy one get one free! These are perfect for the Homemade treats I am making for friends and family! I feel like I ripped off the MALL!!! lol
DINNER
Nothing too exciting for dinner just some leftovers, but I messed around with them a little. I took some Turkey Chili mixed in green beans, butternut quash puree and a dabble of sour cream! MMMM..sorry no pic:(
SUNDAY TREE DAY & LAST DAY OF POTM
This morning I made the most amazing french toast casserole. I had been planning on making this next weekend and then I saw Megs post and had to make it today!!! I saw a recipe in Cooking Light Magazine and played around with it a little.
Cran Apple French Toast Casserole ( my new name for it)
Ingredients:
3 eggs + 2 egg whites
1 tbs butter
1 cup diced apple
cinnamon
1/4 c brown sugar
4 slices of whole wheat bread cut into small squares
1/4 cup dried cranberry's
1/2 cup apple cider
1/2 cup non fat milk
1/4 cup fresh cranberry sauce
a little nutmeg
sliced almonds for topping
1. Preheat oven to 400 degrees
2. Melt butter in pot and apples and stir for ten minutes. Then add 2 tablespoons of brown sugar, cinnamon, and nutmeg.
3.Spray pie pan with non-stick Pam and lay down bread squares to cover the bottom.
4. Sprinkle dried cranberries on bread along with apple mixture. Combine apple cider with the next 4 ingredients plus all of the eggs whisk together, and pour on top of bread mixture sprinkle with remaining brown sugar.
5. Sprinkle with almonds and bake for 30-35 minutes until golden.
This was super yummy and I will be making it for Christmas breakfast with the family!!!!



Well I am off for the day, I was going to run but I am going to rest after my hard workout yesterday. Twas the Day before Thanksgiving...
BOB-JILLIAN WORKOUT
Up this morning at 7am and put the Bob-Jillian hat at on. What is that, well let me explain. You all know Bob and Jillian from the Biggest Loser, well I was in their shoes this morning. I took hubby for a run, which turned out to be a killer workout. I loved encouraging him to keep going to push harder, he is battling a cold right now so this run was hard for him. I would love to be a cross-country coach, I love helping people push themselves!
We are in the middle of no where so we had to run on the HIGHWAY! We ran out for 1.5 miles and then turned around to do some sprints. We ran 4 sprints, ran hard for 30 seconds walked for one minute and then repeat. When hubby had to stretch on the run I did 50 jumping jacks to keep my HR up. When we got done we did 100 crunches, 20 push ups, plank work out, and some GOOD stretching.
Total stats:
Time: 34:32
Avg pace: 11:20, we did walk a little and ran easy...
Max Pace: 4:34
Calories burned: 372 ( this is off because I worked out more)
TOTAL POTM: 34.3
SOUTHERN EATING #7
We ate our first country style bfast at the FIL this morning. After our hard workout this is just what we needed. FIL makes the best home-made biscuits, I have yet to perfect this skill at home. I had two biscuits, some scrambled eggs, a small piece of ham, and my pumpkin oatmeal. I was going to have just one biscuit but then I remembered I only have these ONCE a year!!!

FIVE THANKFUL THINGS
#1. I am thankful for life, in general life is pretty good and I am glad I get to LIVE it!
#2. I am thankful for my car, I am glad that my FIL found me my little Camry no matter if it's old or new it's a blessing to have.
#3. I am thankful that I live in the US, I have so many freedoms that I know I take for granted.
#4. I am thankful for my couples study, I love all of the couples that are in it!
#5. I am thankful for my education, I know that not everyone has the opportunity to go to college, let a lone a small private college.

Pumpkin pie or sweet potato pie: Make pumpkin (or sweet potato) pies with canned, evaporated, skimmed milk. It’s more concentrated — rich and creamy with lower calories and fat than regular evaporated milk
Try to decrease the amount of sweetener in your favorite recipe by about 25 percent. And try using agave nectar as your sweetener. Unlike sugar, it’s loaded with antioxidants. Yes, it has calories, similar to those of honey, but it’s natural — not artificial or chemically processed. Sometimes kicking up the sweet spices a notch, e.g., cinnamon, cloves, ginger, helps to stretch the flavor so the lesser amount of sweetener isn’t as noticeable. Substitute most or all of the whole eggs with egg whites. Eat just the filling of the finished pie and skip the high fat crust. Or, bake the filling in a springform pan without any crust at all.

Miscellaneous tips: Season vegetables with fresh herbs and low sodium seasonings — skip the butter.
There’s plenty of starch at this meal — why not skip the dinner rolls altogether? If that’s not an option, be sure to choose whole grain rolls.

Layovers & a Flirt!
Breakfast Combo:
½ c oats
1 c of unsweetened almond milk
Dash of cinnamon
Dash of nutmeg
2 tablespoons of Hemp Seed
¼ c homemade cranberry sauce
Spoonful of apple butter
Drizzle of agave nectar
A little bit of blueberry granola plank

Before I headed to the gym I had a slice of whole wheat toast with Barneys butter and honey, it gave me the energy I needed to get through my class.
BOSCO SAYS GOODBYE FOR A WEEK
This was hard and even Bosco shed a tear.

I have already put my new Camelback water bottle to the test, it works great! I love that it has a straw so clumsy me doesn’t spill all over misled. Look it fits perfect in my bag too!

HOMEALONE LIKE
When I got done with breakfast I was running around frantically trying to get everything together for my trip. I Miss my hubby, he so good at getting everything taken care for the house before we leave on trips. Don’t get me wrong I am fully capable of taking care of things; it’s just nice to have his support! After loading all the bags in the car, and getting Bosco stuff together to head to his grandparents house it was 11:40 and my plane was leaving at 12:55...needless to say I was stressing. I made it to the airport fine, thanks to my Step Dad Richard, thanks RICH! I thought I was going to have to chase after the plane like the movie HOMEALONE! Got on the plane, and even had a few minutes to spare, and this is where a funny little story comes in.
I GOT HIT ON
As I was going through the security gate this nice gentleman (so I thought at the time) decided to HIT on me. He first gave the line “I think I know you from somewhere” and as SWEET as I am I said “really where are you from” he said, “around”. Ok now I was catching on. He then proceeded to speak and said, “You’re a teacher aren’t you” WHAT man how did he know is he a profiler! Lol…being the nice person that I am I said yes and then hoped he would just go away oooo but no he continued to flirt with me. “ If you’re a teacher maybe you can teach me a thing or tow” DUDE do you not see the giant ROCK on my left finger…I laughed and quietly got the heck out of DODGE.
LAYOVER IN VEGAS
Now I am sitting in Las Vegas waiting to board my plane to Nashville and thought I would give you all my plan for working out this week(this is more for me because I need the accountability).
Sunday: REST
Monday: Run 5 miles easy, go to my old AKB class
Tuesday: Run 5 miles 2 miles at Tempo, yoga in the AM
Wednesday: Run 7 miles 3 miles at tempo, go to old AKB class
Thursday morning: I AM RUNNING 10 miles at least, I was going to do a 5k Turkey Trot but I need to run more then 3 miles.
Friday: headed back home, walk in the evening with Bosco and Hubby
Saturday: Spin Class and weights
Sunday: AKB at night
I know this seems like a lot but with more time and more food comes more working out!!! I ate the second half of my Apple Chicken Pumpadilla on the plane, mmmm…just as good as last night.
CHALLENGE
Attention all runners, I would like to keep us all motivated for a run on Thanksgiving morning, So here’s the deal, comment to me before Thanksgiving on what your plans are for running Thanksgiving morning and then the night before Thanksgiving I will post everyone’s running goals to pump everyone up!!! FRIDAY FUN post!
TEMPO RUN
I woke up this morning bright and early and ran. It’s about time. I am exercising daily, but haven’t been home to run. I was short on time this morning so I made it a tempo run. TEMPO RUN Basic definition: sustained run at faster than usual training pace.
Love this quote: "If I had to pick one factor that separates good competitive runners from everyone else, it would be consistency in training."
How to do a good tempo run: Warm up by running easily for at least 10 minutes. Do the tempo part I try and run at my racing pace a little under 7 minute miles (if I was training for a marathon I would run a 7:40 tempo) and then run easily for at least another 5 minutes to warm down.

Once again I have a lot of hills were I live so today I used some major word inspiration. As I tackle a hill I say to myself “you own this hill, it’s not going to beat you, you can conquer it!” Once starting up the hill I try and stick to my pace or even better pick it up. Today on my last hill I looked down at the Garmin and it said 6:50 at the bottom of the hill when I got to the top I looked at it and it said 5:45!!! This friends is why I run, for the challenge!
I am planning on hitting the gym tomorrow morning for a spin class and do some weights, so that way I am not wasting away that gym membership.
FEW FLEXIBLE POUNDS
I am trying to lose about 3 pounds by Thursday, why you ask? Because I would like to have a few flexible pounds for the Thanksgiving, not that I plan on gaining ANY weight but just in case. So I figure if I skip the sweets, alcohol, and extra handful of snacks until Thursday I should lose it easily, would anyone else like a few flexible pounds?
BREAKFAST
This morning I made me a waffle sandwich. McDonald's has McGriddles and Burger King has their breakfast sandwiches, so I thought "Why shouldn't I have my own creation?", a lighter one that is. So here it is enjoy!

2 pieces of turkey bacon
Drizzle of light maple syrup on both sides

PROBAR #1 Maple Pecan

I tried my first PROBAR Yesterday courtesy of Kendell, it was super yummy. I had half for morning snack and half for afternoon snack; it has a total of 400caloires, and 22 grams of fat! It would be a great meal replacement if you’re in to that, I need real food. It was like a special treat to me, a little salty though (I am not a fan of salt). I don’t like all the fat, but some fat is much needed. Will be taking the to Nashville in my goodie bag for the week.

Ok so my friend Sandy told me about this amazing website called LiveStrong.com. I can’t believe I have never heard of it! I checked it out last night, and am so excited about using it. I love how easy it is to track your food diary (not that I enjoy counting calories). It’s not only for losing weight, but it has everything from training for an Iron man to spending time with your family more! This is so cool and I am ready for the challenge! I love technology. Zap PB Giveaway Results
Saturday morning breakfasts are the best:) Hubby didn't get in till 3am, so I am enjoying some waffles for one. I put some Barneys butter (I could marry this stuff) and banana on top and because I have a long day ahead of me I had a sunny side egg on the side. Eggs tend to keep me full for long periods of time.

Isn't this spoon so cool!!!! The coffee mug is from Beal Street in Memphis, where I spent a lot of weekends at when I was in college.

Thankful Thursday & Zap GIVEAWAY Reminder!
Thursday Thursday....
Today our class is going on a field trip to the Museum, to partake in the "Great Southern California Shakeout". It's a an event that raises awareness about what one should do during an earth quack. It's weird how living here so long has made me completely numb of the fear of earth quacks but when I lived in Memphis I was sacred to death of tornado's!!!!
This morning the alarm went off at 4am but I decided to snooze it and skip spinning class, my right hip flexor and knees are a little too sore right now, and I am doing kickboxing tonight so I will get some exercise. I made a new bfast combo, Muffin Top Oats.
MUFFIN TOP OATS
1/2 c oats
1/2 c hemp milk
1/2 cup H2O
1/2 Banana sliced
handful of unsweetened coconut flakes
handful of flax seed
dash of Cinnamon
1/2 whole wheat banana muffin
drizzle of agave nectar
spoonful of pumpkin butter
I love putting Oatmeal on toast, so I thought what better then putting a muffin right on top!!! I was yummers:)

I also had a cup of peppermint mocha sweetened coffee in my Youth Works cup. Youthworks was something I did for three summers, and opportunity of a lifetime!!!!
Well I am off for the day, going to do a bit of stretching before I hit the shower. I think that today well be a Thankful Thursday, even though I am going through a rough season, there is still much to be thankful for. Have a THANKFUL THURSDAY!

Things that bring me joy


and the first page, funny how most of the things in this book still bring a smile on my face. I am so glad I found this book, I am excited to add to it. Do any of you have a book like this? It's great to have around when you are feeling sad, and need a pick me up.
I also found a copy of C.S Lewis's "The Problem of Pain", I am going to read it again. So appropriate for my life right now.
I made a Piccadilly dish tonight;) For those of you who live in the SOUTH you might know what I am talking about. Piccadilly is one of the hubby's favorite restaurants in Memphis, NOT MINE! It's this buffet place where you basically can get all sides...lol...well that's kinda what dinner looked like tonight. Trying not ti spend money I busted out all the leftovers from the week. Pumpkin Sweet Potato Pie (I added some English Peas and a dab of sour cream), Cranberry Stuffing, and I needed some protein so I finished off the tofu. I think I could be a vegetarian, I LOVE TOFU, and it's so easy to cook!! I don't know what it is about the texture but I like it way better then chicken, in comes close to fish....close....

I also had two very ripe banana's in the house so I whipped up some whole wheat banana muffins...the whole house smells yummy:) I am also sipping on some hot apple cider while I type, another favorite holiday treat.
