Hubby+Pizza…
Hubby+Pizza+Wine+Law&Order+Baseball=the perfect Saturday evening.
I think I made one of the best Pizza’s ever! I grilled together mushrooms, onions and tofu before baking them on top of my pizza. I also put Country Bob’s BBQ sauce on my pizza instead of marinara and mixed in goat cheese into the BBQ sauce, this combination was a party in my mouth!!!!

I also added fresh tomatoes, a small SWEET POTATO, and spinach.
The caramelized onion and grilled sweet potato WAS PERFECT!! Who knew that sweet potatoes would be a big hit on pizza!!
SUNDAY MORNING PANCAKES!
I have been eying the Oatmeal & Banana Pancake recipe in my of Clean Eating Magazine all week, I knew that Sunday would be the perfect morning to make them!
The batter was the perfect amount of texture even though I cut this recipe in half. I am always worried about cutting recipes in half, but it worked perfectly.
While I cooked I made some DD coffee in my French Press, and sipped on it to wake me up a little.
I made small dollar sized pancakes that way I could feel like I was eating more:) Hubby got me this Wild Wild West plate for my birthday isn’t is adorable?? I topped my pancakes with Naturally More PB, and maple syrup. These were the best pancakes I have ever made and so HEALTHY! For all three of these pancakes it was a total of 200 calories+1 tbsp of Naturally More Pb(55 calories)+Syrup(30 calories)=285!
I had some fresh juicy and sweet strawberries on the side, the 4 pound bag is still going!
Sunday morning breaky for one, I am letting Hubby sleep in.

TSL Update
I have added a new rule to the challenge to keep you all accountable and motivated. Anytime you eat out during the challenge you have to take away 5 POINTS!!! That's right you can get negative points, I am hoping this helps us all keep from the temptation. How is the weekend going for all you TSL participants, I am sure it wasn’t easy???
Yesterday I drooled over all the beautiful bikes at the bike shop,one day, one day.
We have Church this morning then off to play Ultimate Frisbee with friends at the park!!! I am so glad I can play again, I don’t have to worry about injuring myself. Ultimate Frisbee is such an amazing workout, I bet I burn like 500 calories in the hour that we play. I am trying to convince the Hubby to ride his bike with me to the park, let’s hope he agrees.

Our Stay-Cation Recap & WIN Contest Reminder!
Sadly our stay-cation is coming to an end…Here are some highlights of our long wonderful weekend.
Saturday Hubby and I had an all day PJ Party, started with a wonderful breakfast:
Blueberry Oatmeal Pancakes: for her, Biscuits and Eggs: for Him
We then had a full day marathon of Law & Order SVU, ( were dorks) and had leftovers ( stir-fry) and beers for lunch.
At about 3pm we decided to go for a walk and then bake a little in the kitchen, we were both craving cookies. I tried making Oatmeal Chocolate Chip Cookies, with Whole Wheat flour. They were yummy, but merged together.
Then for dinner we took a new spin on Shepherds Pie. We had a pie crust leftover in the freezer so we used it for the crust. We cooked ground turkey, onions,carrots, celery and peas together. We put the meat mixture at the bottom of the pie and then topped off with whole wheat mac and cheese, and Trader Joes instant mashed potatoes! Have you ever had mac and cheese in a shepherds pie?!!!!! AMAZING!
The perfect Valentine’s day for the both of us!!! It was hard for me not to be doing stuff around the house, but I forced myself to RELAX!
SUNDAY’S SURPRISE!
I was supposed to run 15 miles on Sunday, but as I was headed out for the run I wasn’t feeling 100%. I had a bit of a headache, and I woke up late so I didn’t get out to run until 8am, and we had Church at 10am. I was cutting it too close. I decided to go back to the house, and postpone the run. I did my Jillian DVD instead on level 3, OOOO MY she is a MONSTER!!! I will be posting more about this on Wednesday.
Hubby and I went to Church and then headed out to Palm Springs to have lunch with my DAD ( he treated us). Palm Springs is only 45 minutes away from us. We met him at the Fantasy Springs Resort and Casino, where Hubby thought we were just having lunch. Little did he know, but my Dad had hooked us up with a room for the night. Hubby was so SURPISED, he had no idea. The best part was, that my DAD wanted to treat us so he paid for the room, and it came with dinner at the hotel, and $25 to spend in the Casino. Thanks DADDY!
Lunch was AMAZING. The hotel had a ton of restaurants inside but my Dad wanted us to eat with him at the POM, he said it was the best.
I ordered a spinach salad, that came with goat cheese,peppers, and caramelized walnuts. With a cup of chicken tortilla soup (my fave).
Here is my dad with his delicious tuna salad sandwich, and the cute cone of fries! We ended up splitting our meals. I stole a couple of fries too;)
We all sat and chatted for 3 hours ( we need to get together more), we then decided to order coffee and dessert. We all split the apple pie A LA Mode, another fave of mine.
Hubby and I then checked into our room and took a nice LONG NAP!!! Check out the view from our hotel room.
After the nap, we soaked in the hot tub. Hubby and I can only last so long in the hot tub, so we quickly decided to hit up the bowling alley(yes they had bowling at the resort) and played for an hour before dinner. We didn’t bring our camera down for the rest of the evenings so the photos stop here, but we did have a blast. I got a 145 score on one game and hubby got 165! We love to bowl.
We then hit up our free dinner, it was a huge BUFFET!!! Oh my, I am glad I didn’t have my camera you would have all been shaking your heads at my plates. I didn’t do so bad on my main courses, but my dessert plate(s) were soooo bad and sooo good!!! They had a chocolate fountain for crying out LOUD!
Then we went out to the Casino’s and spent our free money! We didn’t win anything, but we sure did have fun at the penny slots. I only had one drink, a Red Headed Slut, basically Jagermeister and cranberry juice. It was yummy.
In the morning, we got our last free meal at the POM. I was ready for some REAL FOOD. So I ordered, Irish Steel Oats, and some whole wheat toast. They even had ALMOND BUTTER!

For the rest of today we have been getting ready for the week. I still have a terrible headache and don’t feel like myself. Hubby has been cleaning, and taking care of me like the wonderful man he is. Were about to make dinner and I need to catch up on all of your lovely blogs, sounds like you all had wonderful weekends!!! We ended up spending under $60 for this entire weekend, wow talk about a cheap VACATION! How much do you usually spend on a long weekend vacation? I will be posting another post soon about life on a budget, so stay tuned!

Breakfast for Dinner
Tonight did not turn out the way I intended. I was so excited about trying a RAW meal for dinner, but Hubby had to work late and I had to go to a meeting about the bootcamp were starting this summer, can’t wait to tell all of you about it!
Therefore I didn’t even walk into the door until 8:30pm and the last thing I wanted to do was try something new to cook, so I stuck to something yummy and easy.
I love these pancakes, they are so healthy and delicious I think I shall never go back to the boxed brand! Having breakfast for dinner was the perfect idea, Hubby enjoyed it as well. We shall try for a RAW dinner soon promise!
It has been quite the exhausting day, lot’s of emotions going on. I have some big decisions to make this week, which are good, but choices can be a hard thing too! I will let you all know about it soon, I promise.
I was going to give you all a packing list for the marathon, but I am too tired and have a big day tomorrow. I have to be up early and out of the house by 7:30 and will be gone all day until 10pm! I haven’t even started packing for SD and I leave on Friday afternoon, I also have the May Featured Fridge coming up!!!! Ok I will not stress, breath in, breath out…”sigh”
I think I shall do some yoga in the morning to help me relax a bit!

Just Breathe…
That’s what I keep telling myself this week, “breath Bobbi breathe”. It’s been a very busy week, and I am pushing through strong until Friday evening when I get to crash on the couch.
I woke up at 5:15 am and was going to go for a run, and then decided to postpone it for one more day. My body feels ok, but I can tell that it needs some rest. I strongly believe that one should seriously listen to their body and not over do it!! Instead of the run I did some light stretching and finish up some blogger things that have been on the NEVERENDING gmail task list of mine!! I feel a little better now. Does the list ever go blank??
I also had another wonderful Green Monster this morning with a little mango twist. I used 1/2 c soymilk, 3 cups spinach, 1 banana, 1/4 cup blackberries, 1tbsp of flax seed, and 1 cup mango.
Together in the Vita-Mix!
Perfection, loved this smoothie. I couldn’t taste the mango that much but it was very creamy and almost tasted like a tropical mixed drink;) almost.
I also had some leftover mini Oatmeal and Banana pancakes that were in the freezer. Tasted just as good as the day I made them!
Topped them with a little bit of this bad boy, Naturally Nutty Chocolate Butter Toffee Peanut Butter.
A wonderful fueling and healthy breakfast!
Thank you all for the kind words about my Grandmothers wedding ring, I love it and can’t wait to be able to wear it! I also asked the question last night about Cantaloupe and it’s nutritional value thanks Kate for saving the day!!!
Cantaloupe is excellent for your health. It has about 55 calories per cup and a ton of vitamin A along with beta carotene, vitamin C, vitamin B6, fiber, folate and niacin (B3). The combination of B vitamins and fiber support energy production through carb metabolism.
So I would say...keep eating that cantaloupe! And if you can find other types of melon like Crenshaw, Juan Canaray, Galia....those ones have slightly different flavors and all the same benefits.

Brunch with the Bride to Be
This morning’s brunch with Skinny Bride was so fun and yummy!
I made Oatmeal Banana Pancakes! I can’t get enough of these. Don’t worry, I will be adding these to the recipe side bar so you can try them too!
I made a bowl of fruit salad on the side, mixed fruit with a tbsp of agave nectar + lemon juice it adds just the right amount of sweetness.
I also made us some fresh squeezed OJ from our tree in the backyard, talk about delicious!
For our choice of toppings we had an assortment of Nut butters, Agave Nectar, Honey, and Pure Maple Syrup.
Skinny Bride Update!
Skinny Bride lost 3 pounds this week, so her new program is working great for her. She decided to start Weight Watchers, she has done it before and it is something that really works for her. This time though she will be incorporating more CLEAN food, and working on her relationship with food. She is moving forward and is glowing more then ever.
She was so sweet to get me a cute running skirt and a lavender candle for my birthday, doe’s she know me well or what?!
We chatted about wedding details and life of course.
After brunch I headed downtown sadly in my car because I had to pick up Mom’s gift for Mother’s day and there is no way I could carry it on my bike. I would have loved to make my Mom a gift, but she had already told me what she wanted a while ago and she so deserves it!
I also stopped into TJ’s and the market for groceries for the week,birthday dinner tonight and potluck tomorrow.
I used our reusable bags of course, more TSL points! I am super excited about tonight’s menu, here are some of the stars.
My favorite Riesling and a new Red! I have a lot of cooking to get to, will be posting all the recipes tonight!
I love making people food, it brings me great JOY!
