Tuscan Style Tuesday

2006 Spring Semester of College in Italy

ITALY

Instead of the usual Taco Tuesday, I decided to go with what we had on hand which was Tuscan Chicken Sausages and whole wheat pasta.I wanted to get straight to the kitchen, but I did have to make a couple stops on the way home.

First stop was at Trader Joe’s. The market doesn't always have all the essentials that I need like, almond milk, Fage, soy creamer, and some two buck chuck!

Second top Mama’s house. My Mama had texted me earlier and told me she was getting rid of some old clothes, shoes, and other goodies! So of course I had to swing by before I headed home. My Mama is a Makeup Artist and always has the most fashionable clothes and shoes a girl could want(I need help in this department). She gave me more makeup and fragrances then I knew what to do with, I’ll have to give some to my girlfriends for sure!

My Mama also gave me something very special tonight. She handed off my Great Grandmother’s wedding ring. It is very antique looking and nothing what you would expect a wedding ring to look like, and I love it! I can’t wait to get it resized.

I then quickly headed home to make a yummy Italian dinner!!!

I cooked up the Chicken Sausages with the garlic and marinara in one pan, and cooked in some delicious veggies in another. I used mushrooms, asparagus, spinach, carrots, and peas. I also used fresh basil from our kitchen.

I mixed the veggies and meat sauce and topped it on a bed of whole wheat pasta.

I also sprinkled some goat cheese right on top to finish it off!

On the side I had a colorful veggie filled salad!

With a small glass of red.

It was just what we needed after 4 days of eating out!

I had a whole wheat veggielicious sammy!!! This sandwich is packed with cucumber, tomato, 1/2 of a Gala apple, 1 laughing cow cheese, and a ton of alfalfa sprouts.

I also had some fresh cantaloupe that was at the store for $1!!! I am not the greatest fan of cantaloupe but this one was actually pretty good! Does cantaloupe have any interesting health benefits??

I have a long list of things to do tonight, but now all I want to do is relax. I know I need to get on a few of them because my checklist keeps getting longer and longer!!!! I do want to start reading another book tonight, so I am anticipating turn in early with a book in hand:)

I have an early(5:45am) easy recovery run with fast Jill and Rick in the morning, let’s hope I feel good!!!

I LOVE TRADER JOE'S! Sometimes my essentials are hit or miss though.. and your great grandma's wedding ring is soo pretty :) Good luck with your recovery run tomorrow!

Wow pasta dinner looks great Bobbi! What kind of chicken sasuage did you use? I just picked up some TJ's Sundried Tomato and Basil chicken sasus and I can't wait to try them.

What a lovely ring! And nice of your mom to give it to you. It's funny how styles have changed so much over the years. It would be interesting to see a sample of typical wedding rings over the past 100 years or so.

Cantaloupe is excellent for your health. It has about 55 calories per cup and a ton of vitamin A along with beta carotene, vitamin C, vitamin B6, fiber, folate and niacin (B3). The combination of B vitamins and fiber support energy production through carb metabolism.

So I would say...keep eating that cantaloupe! And if you can find other types of melon like Crenshaw, Juan Canaray, Galia....those ones have slightly different flavors and all the same benefits.

Ok first of all, I think I have that same picture from Florence...only substitute me and my girlfriends for you and yours :-)

And it's so funny that you asked about cataloupe, because I'm planning on doing a post tonight about cantaloupe and its health benefits. Thanks for starting my research for me :-) I think melon, like oranges and most fruit really, is so hit or miss: when it's good, it's AMAZING, and when it's not, it's just blah and boring to eat. My CSA has been giving me good ones, though (and lots of them, haha).

I wish I could find melon for $1! Around here (Michigan), the lowest muskmelon ever gets is about $2.50 for a whole one!

Oh, and the ring is absolutely gorgeous!!!
