Loving the Extra Hour
I can’t believe it’s only 6:30pm and I am done with all my Sunday prepping!
I printed out two recipes to try tonight, Butternut Squash Soup + Pumpkin Butter.
I started with the Butternut Squash Soup, one of my Fall Favorites. The recipe was super easy!!
Peeled and Chopped
Dumped in one box of Vegetable Broth + Onions Sautéed and added in.
After about 20 minutes the squash was softened then strained and placed in the Vita-Mix.
Blended up
Put back in the pot with the broth, add nutmeg and pepper and stir.
Recipe #2: Healthy Pumpkin Butter (from Danica’s Daily) this was even easier!!
Ingredients:
1 15-oz can pumpkin puree
1/2 cup agave syrup or honey
1 Tbsp Pure Maple Syrup
1/2 tsp Pure Vanilla Extract
1 tsp Cinnamon
3/4 tsp Pumpkin Pie Spice*
Pinch of sea salt
I love that I save all my jars, I knew they would come in handy! I can’t wait to try this tomorrow!! Who knows I might jar this stuff and start saleing it :) (like I need another job)…oooo CHRISTMAS GIFT!!!
Oh and I made the rest of the batch of my Pumpkin Chocolate Chip Muffins from our TacOberfest. I am going to freeze these so I can enjoy after my last week of the detox.
While I was baking away I also managed to make dinner. I made Mahi Mahi and grilled asparagus.
These pairing was perfect!!
I love MAHI MAHI, all I did was put a little EVOO over it with pepper and lemon and grilled it at 350 for 17 minutes.
HOLY AMAZING! This soup tasted better then the one I buy at TJ’s!!!

Feels great to start off the month on the right foot. I have lot’s of soup for the week, made lunch for tomorrow, planned out all of our meals, and I have a new workout schedule!!! NO MORE X-COUNTRY :(
MONDAY: AKB
TUESDAY: 4 miles speed work + Strength training
WEDS: 5 miles with running buddies
THURSDAY: 4-5 mile tempo run + Strength training
FRIDAY: 3 miles easy
SATURDAY: FALL COUPLES RETREAT
SUNDAY: Mission Inn Half Marathon!

Today was the first day of the POTM Challenge and I have no miles to show for it, but I will sure have some miles this week. I have a Half Marathon on Sunday!!
Now time to RELAX!!!
I see Hot Cider in my future!!

Yeah you made my pumpkin butter ~ I cannot wait to hear what you think of it. It's delicious, but, I might be impartial :)

The soup looks fantastic. I ADORE this soup this time of year. I'm always trying to finding ways to impove such a classic recipe and I've found that adding apples or pears is such an incredible touch.
Good luck on your 1/2 Marathon this weekend. I am sure I will wish you luck again, but in case I forget, best wishes for you hun! I know you will rock it!
That food looks all so yummy! I wish it actually felt more like fall, so I could be inspired to cook fall foods!
