Bikini Body Breakfast Recipes

Good afternoon friends!
I have been dying to get some more variety of morning meals and in my search I found these over at She Knows!!! Please share any that you may have:)

-- Summer Berry Smoothie --
Serves 1

Ingredients:
1 cup fresh strawberries, sliced 1/4 cup blueberries 1 (6-ounce) container plain yogurt 1/4 cup orange juice 1 cup ice cubes

Directions: 1. Combine all ingredients in a blender and blend until smooth.
2. Pour into a large glass and garnish with strawberry slices and blueberries.

-- Summer Muesli --
Serves 4

Ingredients: 2 cups rolled oats 1 cup low-fat milk 1 tablespoon honey 1 to 2 peaches, peeled and grated 1/4 cup chopped pecans 1 cup low-fat yogurt

Directions: 1. Combine oats, milk and honey in a bowl and let soak in the refrigerator overnight.
2. When ready to eat, top oat mixture with peaches, pecans and a dollop of yogurt.

-- Summer Squash Quiche --
Serves 6 to 8

Ingredients: 1 (12-inch) whole wheat pie crust in a pie plate 1/2 red onion, diced 1 large shallot, diced 2 tablespoons olive oil 1 medium summer squash or zucchini, sliced 1 cup grated Gruyere cheese 1/4 cup crumbled feta cheese 2 tablespoons fresh thyme leaves 2 eggs 3/4 cup half-and-half Salt and freshly-ground black pepper, to taste

Directions: 1. Preheat oven to 375 degrees F. Place pie crust on a baking sheet.
2. Sauté red onion and shallot in olive oil until soft. Mix in squash and cook a few minutes until soft. Spoon vegetable mixture into the bottom of the pie crust.
3. Top vegetables with cheeses and sprinkle with thyme.
4. Combine eggs and half-and-half in a bowl and whisk well. Season with salt and pepper. Pour mixture over vegetables.
5. Bake for 45 minutes or until set and golden brown. Serve warm or let cool and refrigerate.

I've been loving muesli with yogurt left in the fridge overnight ... overnight muesli I guess?

nice recipes, thanks! ever since heather (above) said cereal addicts should try muesli i have been looking for some without raisins, but every variety i see has them! (i hate raisins)~but your recipe just calls for oats.. so what is the difference between this summer muesli and overnight oats? either way it looks delicious, i love peaches!

It is way too hot for oatmeal right now, I have been mostly sticking with Kashi cereal and berries.

I have been making a lot of cereal/granola bowls with greek yogurt. That stuff is crack!

on hot days? i make NOTHING and rely on cold cereals, yogurts, fruits and anything that does not have to be cooked. kind of lame and lazy but i hate that feeling you get when your body/belly is warmer than the outside temp!

Fabulous recipes. That muesli sounds great! Can you keep it in the fridge for a while?

Oh how I wish I could revert from my standby bowl of cereal and ice cold soy milk. I do; however, change up the cereal mix everyday.
It always starts with 1/4 C of Fiber Twigs, 1/4 C of Flax flakes, and then whatever fun find I have (some favorites are kashi, granola, puffins, or rasin bran)
I then put my ice cold (and yes, its ice cold because I let the milk sit over ice for a few min and pop it in the freezer until ready to pour) and finally top the bowl with a ton of fresh berries.

This is so devine and totally fills my tummy every morning. I am always entirely full for HOURS!
