Taco Tuesday=Mexican Lasagna!

Tonight I wanted to go anywhere, but the gym! I am not sure if it’s the heat or what, but I have been so EXHAUSTED lately. I have had plenty of sleep and been drinking water like a camel, but still have been really tired. It took everything in me to pull myself to the gym tonight, but I did it!

I brought my little paper, so I would stick to my treadmill track workout. Yes I know it’s chicken scratch.

I ended up doing all of it except the last 800, my right IT band was really tight and I didn't want to push it. After the intervals, I hit up the weight room and did Gina’s Summer Shape Up workout:

Day 2: Shoulders, Chest and Triceps
-Dumbbell skull crusher  (can do on bench or laying down)
-Push press
-Push ups (as many as you can)
--Elbows out extension
-Cable crossover (for at home workouts, use resistance bands or lay on the floor and do flys with dumbbells)
-Dumbbell frontal raise

I also did 10 walking pushups and crunches on the stability ball. The funny thing is I could have stayed at the gym for another hour!!! Isn’t it funny that it might take everything in you to get to the gym, but once your there it feels soooo good?!

When I got home I made a mean version of Rachel Ray’s Mexican Lasagna. I saw it on Jenna’s blog and I have had it on my mind for Taco Tuesday ever since!

I had just about all the ingredients on hand, except for the corn so I just put in some pinto beans instead. I also didn’t have cheddar cheese so I used Colby and a little light mozzarella. I also used lean ground turkey instead of ground chicken, since I changed the recipe so much does that make it mine?!

The bottom layer: there are tortillas under the meat mixture.

WOW, this was too easy!! It seriously took me less then 20 minutes to make, and I will have leftovers all week!!

My second piece I decided to add some Fage, and olives! I think next time I will make the dish with olives:)

Well I gotta get in bed so I can start relaxing, I have an early morning run at 5am!! I am also meeting my friend Veronica for coffee tomorrow morning, (I’ll be making mine at home of course), and I will be biking to the cafe. It is only a 2 mile bike ride!!

Mexican lasagna sounds great! Can you believe I hated lasagna (and any other pasta) until I was about 15? Now I love it all.

I like how you made a workout list on note paper. Cute photo. How do you do walking push-ups? It sounds hard.

You're right... just getting to the gym, or getting out there, is our biggest challenge!

Umm, that lasagna looks delish!

Hon, do me a favor and have someone check out your IT band. You're a month out from Boston and it shouldn't still be bothering you. Chances are you just need a really good deep tissue massage to work it out. Someone doing it, not the foam roller. The massage should help relax that muscle. And some home strengthening exercises for it. Trust me, I've been there! :D

Sounds like you might need a day off to get some rest!! Don't push it too much and end up getting injured.

Bobbi- that's so great you went to the gym even though you didn't feel like it! Must have felt good in the end!
I bet the heat takes a toll on your energy levels. Perhaps there are some foods you can turn too as well to boost energy levels? I wish I had more information to share! I need to get my health books out! :-)

Looks lovely. I think I saw a recipe similar to this on the Food Network recently (Emeril?). Anyway, reminds me about a tamale pie recipe I've been meaning to try. Yay for comfort-food turned Mexican!

ooh you need some quality sleep! i love the note-paper workout!!! i am totally right there with you (i use post-it notes!). my IT band got tight today on my run for the first time, EVER! i am worried!!!! what do you do to stretch it out??? i tried to foam roll but that is one i have a hard time doing correctly.
