A Healthy Mexican Feast+Send Bobbi to SDRR

That’s right, Hubby and I celebrated  Cinco Sies De Mayo tonight! I have been eyeing the Mexican feast that Kath and Kelsey had the other night. I tried to replicate it as much as possible with a little of my Mexican heritage of course ;)

The meal was taco salads. I had just about everything on hand all I had to pick up at the store was these organic corn chips.

The layers:

  • Spinach bed
  • Topped with a cooked mix of bell pepper,onions, white shoepeg corn(the only thing we had in the pantry), tomato, kidney and black beans spiced with oregano,chili powder.
  • 3/4 cup of Ground Turkey, seasoned with McCormick’s Taco Seasoning
  • Kelsey’s corn salsa( I added about 4 chunks of mango)
  • 3 avocado slices
  • light sour cream
  • Cilantro
  • Chips for dipping

And of course nothing tops a Mexican Feast like a Margarita(Virgin).

I saw this recipe and of course mixed it up a bit.

  • 1/4 cup fresh squeezed OJ
  • 4 chunks of frozen mango
  • 1/4 frozen mixed berry
  • 1/2 packet of strawberry kiwi Crystal Light packet
  • 6 iced cubes
    all mixed up in the wonderful Vita-Mix

BEST Margarita ever, can’t wait to try it with some Tequila!

 

 

In case you were curious, here is what Hubby had.

It wasn’t as healthful, but not too bad. Veggie refried pinto beans, light cheese, shoepeg corn and ground turkey.

So I think I failed at my first attempt at the Raw Wednesday Challenge! I guess I am going to have to try again next Wednesday. I did do a little bit of research and am going to pick up a book at the Library tomorrow to get more information. Here is what I ate for lunch today and my afternoon snack.

I didn’t get in that 3 mile run I so anticipated today but I did ride my bike to work and to the grocery store for a total of 8 miles!!

TSL UPDATE

Ate all meals at home= 3 points
Rode Bike to Work=1 point
Rode Bike to Market=1 point
Used a Coupon at the Market(I used to never use coupons)=1

Total Points: 6!

Alright it’s passed my bed time, Dodgers are soooo going to win so I am calling it a night. Plan is to go to an hour of Kettle Bell’s in the morning, I am crossing my fingers:)

I must try that margarita recipe.

I think I failed in the raw challenege today too. I really need to read more about it because I'm not entirely sure on all of the rules of raw yet either.

we are definitely doing a meet up on Saturday around 12ish or so for a bunch of the runners... .I think I copied you on that email, who knows.

I won't be in town on friday too bad!! I will be around later that week though, we want to try surfing!!

I have been making lots of little changes for SL and it's pretty cool

Please, please do not take this the wrong way but reading the post made me think about all the charities out there, etc which need donations. I agree it would be great to see you run your race but I'd love to see people donate more to those less fortunate than us...those who can't even afford sneakers.
