Taco Tuesday With a Twist!
First night home in a long time, it felt so nice to come straight home and get in the kitchen. Last week I only got to cook dinner ONCE, and tonight is TACO Tuesday with a twist.
First take a peek at my first spelt tortilla wrap sandwich I had for lunch today:
It had sprouts,a home-made black bean burger, lettuce, a slice of tomato and Country Bob’s BBQ Sauce. mmm…
Back to Dinner: I picked up these at TJ’s this weekend, and couldn’t wait to try them! See that lit candle in the back, it helped knock the edge off of the day:)
Turkey Meat cooking up, 1/2 pound turkey meat+1/2 can tomato sauce+McCormick Taco Seasoning!
I used some TJ’s light shredded 3 cheese blend.
Instead of the usual ww tortillas, we went with a sweet potato for me. and a rustic potato for him.
Topped it with some beans….
Then with the turkey meat and cheese:) I am sure this would have been just as good with just the beans and cheese!
Hubby’s potato, his diet is going well. He loves breakfast cookies, and loves this healthier version of a chili cheese fries:)
I would have loved to have a large salad too, but to tell you the truth I was too lazy to make it…lol

My favorite thing when I get home from work? Kiss my honey hello and mpet my puppy...and then check blogs! (which is sad since I spend all day in front of a computer too).
I have you say, that is the healthiest Taco Tuesday I have ever seen! Much more so then some of the Taco Tuesday's happening down the street (kinda) from me right now!

That looks like a boy-proof recipe. I'm going to have to try it out. I could see the boy just loving it!!
I should try that out, I think my fiance would like it...except in a reg potato, not a yam!

Oh those are delish looking meals :) I'm so glad that hubby's plan is working out well for him! It's probably easier for him, since he has a creative cook who makes delicious foods!
i could honestly move into Trader Joes!! :D I made a pizza thingy with that cheese tonight! I love your healthy slash non-alcoholic taco tuesday ha!

Taco Tuesday sounds like so much fun. I might have to steal that idea from you.
My favorite thing is to kiss my fiance on the forehead (cute tradtion we have) and then say hello to my very excited puppy. My second favorite thing is putting on my yoga pants (otherwise he sheds all over my nice work pants)and playing some more with the puppy.

i like to turn on some music and put things away. that way i'm sort of started on a productive path. if i just sit down and veg i will prob not get up. i get those TJs black beans, too! they are good :)

I love that idea for tacos, I was planning on having a taco salad tonight but may just have to have this!
Yum! Great twist on tacos!! When I get home from work I like to make something to eat, sit on the couch, and watch something on my TiVo list!! I am always exhausted after a 12 hour work day!! Luckily I only have to work 3 days a week:)

hmm hadn't thought of beans on the sweet potato, but i am eating one for dinner tonight so maybe!
when I get home I like to just destress for a bit...first I get things all organized then i usually walk for a little bit (unless i didn't workout in the morning)
My favorite thing to do when I get home from class is put my feet up and watch some TV! And make food!
That is a great idea for a "taco". I should so try it with the sweet potatos I have around - I think I have all the other necessary ingredients too!
