Two Great Meals!

I feel great today! I think it must be the extra hour I gained today :)

I had some extra time this morning so I made some Gluten Free Pumpkin and Banana Pumpkin Pancakes.

The Ingredients:

  • 1/4 cup of Soymilk
  • 1/2 c Pumpkin
  • 2 egg whites
  • 1 cup of ground oats
  • 1/4 cup of whole oats
  • 1 Banana
  • 1/4 cup of apple cider
  • 2 tsp of baking powder
  • 1/2 cup gluten free flour

Mix all the dry ingredients together (I added in a little pumpkin spice too)

Blend all wet ingredients together then gently fold into the dry ingredients.

Measure out 1/4 cup of the batter and cook for about 2-3 minutes on medium heat.

PERFECTION!!!! I drizzled a little Agave Nectar on top as well. Next time I adding chocolate chips :).

I also had a cup of Apple Cinnamon Tea.

After Church Hubby and swung by the market to pick up a couple things for the week and when we got home I made a salad and soup combo.

My salad contained romaine lettuce, tomatoes, cucumber, salsa, squeeze of lime, and topped with avocado.

With a cup of Split Pea Soup, my favorite!!!

I also grilled up some mini organic corn tortillas.

I am currently watching Miss. Congeniality on TV and plan on prepping for the week and make a FUN dinner!

Those pancakes look superb! Though I agree choc chips would put them over the top :-)

Those pancakes look awesome - we did pumpkin waffles this weekend and they were SO good!

Aww, I had Pumpkin Pancakes too!!! I added peacans to my batter for a little something extra and it was sooo worth it. The little crunch was perfect! Sometimes I add chocolate chips though when I am feeling extra crazy. lol.

I love that first mug too. I feel like I saw it in a store recently and wish I had bought it.
