Pumpkin Rice and Beans

Lunch today was amazing. I was inspired Heather’s dinner the other night and decided to make it for lunch today.

This is super easy and super filling, black beans, brown rice, 2 tbsp of pumpkin puree, and 2 cloves of garlic. All mixed up!

I also dug into my my, persimmon ! It was good, but kind of difficult to eat. Can you eat the skin on these?

Earlier today I enjoyed an Pink Lady apple and nuts for my mid-morning snack!

I am super excited about being able to go straight home after work instead of practice!!! I feel like a load has been lifted off my shoulders, I loved coaching but I so need a break.

Question: If you could give up obligation in your life right now what would it be??

I love persimmons! Cut the green part off the top, and then slice them thinly -- almost like you were slicing a tomato for a sandwich. You can leave the skin on :)

That lunch looks great. I love the combo of sweet potato and black bean so I bet that's pretty similar. Also, I've always wanted to try a persimmon but they're 2 bucks apiece here :-(

I've never had a persimmon before, what do they taste like?

If I could give up an obligation it would be my day job. It pays the bills though so it's not going anywhere!

School, but I gave up work ;) I wish I could work out all day or make myself work out all day I really need direction for it right now.

Any tri people have ideas for a beginner training plan if so PLEASE visit my blog and comment. I think I want to try to get stronger for that, but I am NOT in swimming shape at all.

Enjoy your night off!! Soak it in. I would give up my part time job to be able to workout, volunteer and focus more on my major.

OMG. I had the SAME question when I ate a persimmon. The taste of the skin stayed on my taste buds during the whole eating process. I did NOT enjoy that. :( But the middle part was yummy.

I say these two words in my head over and over when selfish spending overcomes me or when I'm paying bills each month.

Pumpkin sounds like a good addition to R&B, I definitely need to try it.

The one thing I would like to give up is teaching at night. I definitely love teaching, but, I have worked 2 jobs for almost 3 years now, I would love to be in the position to only have to work 1.
