Eggplant Love

Evening friends! I just realized in two weeks I will be in Tennessee! We are spending Thanksgiving with Hubby’s fam, so excited!  Do I have any readers from Tennessee out there? I would love to meet up while I am in the SOUTH :)

Work flew by today because I have ANOTHER retreat I am registering for this weekend it’s the Father and Teen Daughter Retreat. My Daddy and I are going to attend, I can’t wait! I don’t get to see my Dad as much as I would like we are just two very busy people. But when we do get together we have a laugh fest of a time, my Dad is one of the funniest people I know!

On to Dinner….

I finally used our Eggplant from our Garden!

I sliced it up and threw it on the George Foreman along with some sweet red peppers.

I took a little marinara sauce and spread it on top of an Arnold’s Thin, then layered up my sammie with all the veggies and goat cheese.  I also grilled up some mushrooms to add in too.

I am out the door again for scrapbooking with the girls!!
