Flourless Pumpkin Banana Pancakes
Happy Sunday Morning Friends :) !
Waking up this morning was a bit challenging, it was just sooo cozy in bed I could have slept forever. I think 9 and 1/2 hours was enough!!! I was craving some pancakes when I finally crawled out, so I got right to the kitchen and made the best Flourless Pumpkin Banana Pancakes!
These are super easy and so good!
- 1 cup of oats blended up in the food processor
- 2 egg whites
- a pinch of cinnamon
- 2 tsp baking powder
- 1/4 c oats not blended
- 1 banana
- 1/4 c pumpkin puree
- 1 cup almond milk
- 1 tsp of vanilla extract
Directions: Whip together blended oats, non blended oats, baking powder, eggs, and cinnamon. Blend together banana, milk, pumpkin, and vanilla and then fold into your dry ingredients. Cook on medium heat oiled (EVOO) griddle and ENJOY!
I was a little worried about making these without flour, but they tasted PERFECT!
I enjoyed my Pancakes with some POM syrup. I mixed a little POM and Honey together and nuked for 30 seconds. Such a great alternative to a sugar filled syrup.
I also enjoyed a cup of Rooibus Tea with Almond milk.
Such a fun cooking morning, now time to get ready for church. I am excited to head to the Pumpkin Patch today, Fall is the best!

That breakfast looks delicious Bobbi! Makes me wish I would have made french toast this morning, but I opted for staying in bed instead :)

Ok question...Do you blend dry oats or cooked oats?

Oats never compromise the flour taste/text. I try and use oats for all my baking. It usually works.
These pancakes would be even bettterrr with some cocoa and dark chocolate. :)
