Pumpkin Chili Take Two

I was excited to bring leftovers for  lunch to work today.

On the bottom of my bowl was some Grilled Egg Plant, I cooked last night.

mmmmm! I know it doesn't look to appetizing but it tasted even better then yesterday! Filled me right up, I am sure I am going to last until dinner.

For my mid morning snack I enjoyed an apple and string cheese, along with my coffee.

Tonight I am headed over to my dear friend Gingers house to do a bit of scrapbooking. I really would like to bake something to take over there, any ideas. It needs to be quick and easy :). Thanks friends!

This is super easy and YUM!
1 box of spice cake mix (Duncan Hines makes a good one)
1 can pumpkin (15 oz)
2 egg whites
1/2 cup water
Mix everything together and bake according to directions on the box. I like to top with crushed walnuts or pecans would be good, too. The pumpkin makes it so moist, you'll forget there isn't any oil or butter in this cake!

if you have some leftover pumpkin, Holly (over at The Healthy Everythingtarian) made some awesome looking pumpkin molasses cookies that are healthy.

oh my gosh mine is real similar to amy's! but i don't use the egg whites or water.

pumpkin chocolate chip cookies:
1 box spice cake mix
15 oz canned pumpkin
1 bag chocolate chips

glob into cookies and bake for 10 min @ 350!

This may not be baking but fudge:

1 container of PB
1 container of chocolate frosting

Melt both in microwave for 1 min.(I just microvwave in the container) Pour into 8x8 pan and then put in fridge overnight. FUDGE! It's really good too!

I love fall too! I'm lucky to have apple, pear and plum trees right outside my front door. An easy bake that's always a hit with my friends is Apple Crisp. It's healthy and quick because I don't peel the apples. Just take 4 cups of apples (granny smith is my favorite)sliced, 1T lemon juice, 1/3 cup whole wheat flour, 1/2 cup brown sugar, 1 cup oatmeal, 1/2 t kosher salt, 1T cinnamon and 1/4 cup melted butter. Put apples in shallow 8" pan. Sprinkle with lemon juice. Combine all dry ingrediants with butter and mix until crumbly. Sprinkle mixture over apples and bake at 375 for 30-35 minutes.

Okay, so I made the Pumpkin Chili and it looked nothing like yours. Major pumpkin fail... Lol
It's still simmering so I haven't officially tried it yet. My fingers are still crossed. Here's hoping!

Yep, I told you it would be even better then second time around. I don't lie about this stuff girl! :)

Hmm, I wish I had a good quick dessert recipe but I am seriously a challenged baker. I would just stick with a tub of fro-yo and many spoons. :)
