Who Say’s You Can’t Have Ice-Cream on a MONDAY?!

Hello lovelies, sorry I was MIA yesterday I was practicing REST!!

This morning started week #2 of Cross-Country practice. We ran 2.5 miles easy and the kiddo’s started their first day of school. Sometimes I miss high school and then I think of all the DRAMA and heartache and I praise God I made it through!

I got ready at my Mama’s house and packed my GM TO GO: spinach, soy milk, flax seed, and blueberries.

My office was empty this morning, so I got a ton of work done today. I also found out some SAD NEWS I can’t go to the Foodbuzz Festival this year because one of the couple conferences that I am in charge of and that Hubby and I are attending falls on the same weekend :(. Oh well there will be more I am sure!

On a more positive note today I signed up for a local 5k, called Beautiful Run. By participating in Beautiful Run I will  help support the BEAUTIFUL::AFRICA Campaign, which will purchase food and supplies for Beautiful Gate care center in Lesotho, Africa, allowing their staff to concentrate on what they do best…caring for children! I am super excited, haven’t done a 5k in a while.

For lunch I enjoyed an Avocado and Sprout Sammie with fresh tomatoes from our garden and delicious cucumbers.

Later in the afternoon our snack shop was giving away FREE ICECREAM and cookies, normally I would have kindly turned them down but not today!

Who said you have to only enjoy treats on FRIDAYS?! I say have a treat on Monday, it sure makes the week start out SWEET!

The day flew by and before I knew it I was off to run home to play Athletic Director. I have lot’s of email’s to send out and schedules to write, I am glad I had this cute face to welcome me home.

I needed something to snack on before class tonight, WW tortilla+1/2 nanner+ PB=PERFECT PRE-WORKOUT SNACK! Check out Jenna’s post over at True/Slant, she talks all about some great pre and post-workout fuel.

I have two hours to get things done around here, and then off to teach kickboxing!

I definitely had my scoops of ice cream today. If you don't start off the week a little fun and funky, it's just not going to be a good week in my opinion

I think ice cream should be had everyday! I had banana soft serve today!! Yum!

You had soft serve and cookies, I had grilled shrimp, greek yogurt, egg whites, fat free milk, and light string cheese today lol. That's what I get for my carb-laden weekend! :) Excited to be back though.
