Breakfast for One Please

I slept in until almost 9am this morning, and it felt great! I got to sleep in a princess bed, I always wanted one of these growing up so it was fun.

I woke up starving so I immediately threw on my running pants and jacket and headed out the door for some breakfast! I decided to treat this weekend as a retreat/getaway from the business of life. I haven’t had a chance to breath in a month, it was MAY MADNESS!!!

I was in search for the perfect breakfast cafe, and found one not even a block away. I wish I would have known earlier, I would have walked.

The Curbside Cafe, was just what I was looking for. A Mom&Pop shop that have a ton of character. The waitress was sweet, when  I walked in she said, “ You look like a coffee princess let me get you that cup.” She was right, I was in need of my coffee!

I contemplated what I should order, I was thinking about the Tofu scramble, and the oatmeal sounded good, but I  ordered the Juevos Rancheros, when in SD I must eat Mexican food! Eggs+Fresh Salsa+Avocados+Black Beans+ Corn Tortillas=Heaven!

It was HUGE, I only ate about 3/4 of it, and only had the two corn tortillas.Back in the day, I used to eat these all the time covered in cheese. I kindly asked for the cheese to be on the side, so I could control how much I put on it. I forgot to order the eggs over easy, but it was still wonderful!

It was kind of nice eating alone, but I did miss the Hubby! I am sure he is still asleep and Bosco is right there with him.

I have a relaxing day planned today, I am headed to the San Diego Rock and Roll Marathon Expo to pick up my bid and free t-shirt of course, and another fun blogging meet up. I am kind of excited about going by myself to the expo, so I can take my time and check out all that there is to see. A pre race expo is like a runners, Toys R’ Us! I am getting gitty just thinking about it. Not sure what the rest of the day holds but I am sure it will be fun!

Only one more day until I am running another 26.2 mile race!!!

Mmm, I love huevos rancheros! It's definitely one of my favorite dishes.

Good luck tomorrow lovely lady! I know you all will do wonderfully and i'm so glad you were able to run this! The half went well for us NYC gals today and I can't wait for some training tips so my next one can go even better!!

I love the princess bed. One of my best friend's has a canopy bed that I sleep in sometimes when I stay at her parents house. I always wanted a canopy as a kid so I always sleep really well when I stay there!
