The Easter Bunny Made Me Do It!

This weekend was an overload of food, friends, family and Birthdays. I had some of this, and this, and then today ended with a ridiculous amount of sweet treats.Today we had an Easter Family Feat at my Aunt’s house. I decided to bring two of my favorite appetizers and some yummy strawberries.

Easy Chili Cheese Dip: Light Cream Cheese, Fat Free Turkey Chili, and light cheddar cheese.

Tofu Spinach Artichoke Dip:

ingredients:
1 package (1 lb) light silken tofu, drained
1 package (8 oz) neufchâtel light cream cheese
1/2 c Parmesan cheese
3 cloves garlic, halved
2 tsp Dijon mustard
1 package (9 oz) frozen artichoke hearts, thawed and finely chopped
1 package (10 oz) frozen chopped spinach, thawed and squeezed dry

When we first got to the Aunts house I made a plate of goodies to hold me over, and so I wouldn’t just sit at the appetizer table and go nutz! 15

I had a little bit of everything fruit, veggies, some dip and some of my Aunts broccoli salad. I need to get this recipe!

I couldn’t help but snack more on the dips, and eat lot’s of these little bad boys. Mini Egg Whoppers! Why is Easter CANDY soooo good?!

My Nephew Baby Tyler, and my Cousin Celina. Don’t you love our Easter Baskets?! My family has an Easter egg hunt for the little ones, teenagers, and even ADULTS!!! SO FUN, I felt like I was 10 again.

It couldn’t have been a clearer day! I just loved watching my bros run around and find eggs. They were so funny:)

I finally got in a meal, I loaded the plate with turkey, sweet potatoes, stuffing, green bean casserole, and a little of Grandmas famous mashed potatoes. I felt like I was at Thanksgiving all over again.

We also celebrated birthdays! My Grandpa’s birthday is on the 19th, my cousin Kim's Birthday is on the 20th as well as mine:)

I had a little bit of both, blackberry cobbler(ate 1/4 of it) and 1/2 of this wonderful banana cream pie!! I forgot how much I love banana cream pie:) I think ALL THE CANDY GOT TO ME!!!!

It turned out to be a wonderful Easter celebration with the Family, I just love holidays!

I am sitting at home right now watching The Biggest Loser feeling like crap, I think I had my limit of sweets for the MONTH!!!! My body does not like all this sugar in my body, I shall be on full detox mode this week.

I have a big week ahead, only 5 more days till I leave to Boston and 7 days until the Marathon and my Birthday. This week will be focused on strength training and light running, nothing too intense. I want to eat as clean as possible and hydrate, hydrate, hydrate. I am also watching one of my students all week which will be crazy, but the extra cash will come in handy for my Boston trip:)

This week was really stressful and more then I wanted to handle but I am praying this week I would focus on the positives and do some major meditating and refocusing. YOGA here I come! Well I gotta get that check list crossed off so night friends!!

I always love reading about your family gatherings. They seem so fun and laid back. Plus, the gorgeous weather makes me super jealous that you get to be outside and it was SNOWING in Rhode Island on Saturday!
