TACO TUESDAY:BBQ Tacos!

When I got home Hubby and I cleared out the living room and did level 2 of Jillian's 30 Day Shred Video. I love my husband for doing this with me, what a MAN! Then it was TACO TUESDAY! I wanted something different tonight in my taco, and I was craving some of Meghann’s BBQ Tofu. Yes I did it, I made a BBQ Taco.

For the inside stuffing's, I mixed 1/4 of a block firm diced tofu, 1/4 cup of frozen peas, and a red bell pepper. Sprinkled with McCormick's taco Seasoning:)

8

I plopped it on top of some black eye peas in a whole wheat tortilla, and drizzled some Famous Bob’s BBQ Sauce. I forgot I wanted to put some light laughing cow cheese on the tortilla, so after this photo I stuffed it in their:)

9

Served with some leftover whole wheat orzo, wild rice salad.

mmmm…the combination of bbq sauce tofu and Swiss cheese was STELLAR! I know it looks weird, but it tasted so wonderful. Taco night shall never be the same. I was still hungry a bit after and wanted to EAT CHOCOLATE, but I went straight for a peach and made some tea.

I am currently working on a plan for the “skinny bride”. She is very active, so it is really the diet that she needs to change. Her goal is to lose 40 pounds by October. I know she can do it! Right now she needs some snack ideas to keep her going through the day….

What’s your favorite healthy snack?

Alright folks its almost 9 and I haven't had my Yoga fix for the day, I have a 5am wake up call to run with a new buddy!

I have a couple of favorite healthy snacks.
1. Medjool date stuffed with almond or peanut butter.
2. chopped apple with cinnamon, microwaved for a couple of minutes...tastes like apple pie filling!
3. TJ's whole wheat mini pitas with a little almond butter and low sugar jam.
4. a packet of instant oatmeal with a little yogurt on top.

apple and peanut butter! or raw veggies with hummus. You have to watch portion size with both, though.

Haha I'm sorry that they sent you chocolate ;o) That's the one I got, too! You can do it Bobbi!

I am dying to try POP chips! I must find a way, lol. And BBQ Taco?! That sounds awesome!

Favorite healthy snack: fresh fruit because it tames my sweet tooth!

I think yogurt and fruit/granola is my favorite snack.

Your dinner looks awesome. BBQ sauce seems to be the name of the game this week in blog-world. I need to get my hands on some ASAP.

Love Bosco! What a cutie!

I like a mixture of fruit: some sliced bananas with grapes and sliced apples. That's always good. Or watermelon wth honeydew melon and grapes. Basically, a fruit salad of fruits that I like. And it's sweet so that helps keeps me aways from some junk foods.

I think it's AWESOME that Matt is doing the workout with you!! Taylor said he was going to get another set of 5 lb weights so he could do it with me, too. Although, I don't know if he will cause he's always pretty tired after landscaping.

Sorry about the chocolate in the mail, dang what a temptation, right? You'll be fine though!

Are those lunches you bring from home or are you making those at school?

I can't believe you're giving up sweets. I could not live with out chocolate!

My favorite healthy snack is fruit, if it were up to me I would eat fruit all day long, but I've discovered thats unfortuatnely too much sugar for me so I have to limit my intake.. it makes me sad :(

Love your Taco Tuesdays!

Favorite healthy snack... raw veggies with a *small* amount of salad dressing. Or a snack baggie with kashi cereal. For something sweet, a date with nut butter.

Here are some suggestions from another bride who is trying to lose 15 lbs by October!
1) Apple with pb2 and greek yogurt mixed together (it makes a great dip)
2) Mixed fruit (buy grapes, kiwi, berries, apples, etc at the beginning of the week, chop them up in a HUGE container, sprinkle with lemon, and enjoy all week!)
3) Healthy bagel n lox: 2 pieces wasa, lf whipped cream cheese, onions, lox!
4) Raw veggies and salsa

If you have any help you can send my way i'm trying super hard to lose this weight because I want to be confident and gorgeous for all the pictures. I've lost it before (used to be 190, now 155, had gotten down to 130)..and I lost 2 lbs last week at WW so we'll see what this Friday brings! Definitely gave up sweets and dedicated myself to 6 days of workout (really pushing myself) during Lent.

One of my fav healthy snacks is to mix 1/4 cup of dried cranberries with 1/4 cup of salted soynuts. This has about 200 calories, satisfies your sweet/salty/tart cravings all at once, and is super filling.
