SO MUCH TO BE THANKFUL FOR

Last night we didn’t get home until 11:30 and didn't get in bed until midnight and I was still up at 6:30! ON A SUNDAY! BOOO! O well sense I was up, I made the best bowl of oats, will share in a moment first let me do a little recap of last nights festivities!

A group of us went down to Balboa Island last night to watch the annual Christmas Boat parade. We have a friend, named Syd who is so kind to open his home to us for the past 7 years to celebrate this event. (thanks Syd you the best). We got down there around 4:30 and helped Syd set up the appetizers, which all looked amazing. Hummus, guacamole, Salsa, tortilla chips, and pita chips. I picked of course but didn’t spoil my dinner.

We brought the most amazing Mini Chocolate, Pumpkin, (cinnomen hubby threw in) muffins! This was my NEW THING for the day! Whatever you do you all must make them this season!!!! There so easy to make it’s not even funny! Here is the recipe:

MINI CHOCOLATE CHIP PUMPKIN MUFFINS

  • 1 box of yellow cake mix
  • 1 can of pumpkin
  • 1/2 c water
  • 1 bag of chocolate or cinnamon chips heck or a little of both

Preheat over to 350 degrees. Mix together all of the ingredients, spray a mini muffin tin with non-stick oil, pour in batter. Place in oven for 13-14 minutes! AND ENJOY!

We had some sandwiches and salad for dinner, I had a turkey open face sandwich and a large salad with a glass of sparkling apple cider.

We then went outside to watch the parade. The light parade was ok this year, there wasn't the big BANG at the end that we anticipated. But it’s always fun to be with friends:

After the parade we grabbed some Sbux (which two of the guy with us are anit-Sbux, so this was interesting). I had a Grande Passion Tea mmm. We walked around the Island to see what all the people had done with lights on their houses. Let’s just say we were AMAZED!

SUNDAY

This morning I made some Almond Roca Oats. We have this large bag of a homemade almond Roca from the Bowies that we need to eat, and it’s soooo good. So I thought what the heck I ll throw it in my oats, it was good choice!

ALMOND ROCA OATS (a Sunday treat)

  • 1/2 c oats
  • 1/2 c skim milk
  • 1/2 c water
  • 1/2 banana sliced
  • pinch on cinnamon
  • a piece of almond roca ( mashed up in a ziplock bag)
  • handful of flax granola
  • spoonful of AB
  • 1 tsp of chocolate chips

With a cup of coffee in my new mug.

Well folks I am out of here! I have soooo much to get done today, I wish you could all see my house it’s a DISASTER ZONE. I planned on cleaning yesterday but ran out of time. So today after Church all I am letting myself do is put on the grubby cloths, gloves and ipod and taking care of business!!!! Today is my off day from working out, but I think I might get some sit-ups and pushups in between cleaning!

Edited to add: I AM SO RENTING THE WHOLE BLOCKBUSTER OUT OF HOLIDAY MOVIES, and having a Christmas Movie Marathon this week!!! I haven’t even watched ELF!!!!

what a FUNNNN night, damn that internal alarm clock! I love Balboa Island so much, we have a similar boat parade in LB, down in Naples, so gorgeous! Good luck cleaning..and how can someone be anti- sbux!?? :D

ooh that looks so fun! and those xmas lights on the houses are amazing, as are those on the parade boats!

quick question: when you measure out 1/2 c oats, is that dry or already prepared? rolled or steel cut?

So much fuN! I'm a little sad I haven't really been anywhere to see Christmas lights yet. Maybe I will drive aorund tomorrow when I'm at my parent's. :) And I've maxed my DVR out on Christmas movies so we are on the same wavelength ;)
