Easy Potato Soup

I was dreaming all day about playing in the kitchen. I have been on a major soup kick, and tonight I decided to make some Potato Soup. I had all the ingredients in my kitchen already.

6 Yukon Potatoes

Onions+Garlic+1 cup Half and Half

First boil about 6 potatoes,1 cup onion, 4 garlic cloves and 4 cups of vegetable broth for about 20 minutes until potatoes are soft.

The recipe I was using was a little too complicated for me, so I made it my way.

I blended up the potatoes in the Vita and then returned back to the broth along with 1 cup of Half and Half. I also added in some goat cheese, sea salt, pepper, and sage.

Topped off with some WW bread crumbs, mmmm… so comforting.

Hubby and I are going over to our neighbors for the Truth Project. have done this study before but this will be Hubby’s first time so excited!

Congrats to Miss. Jenna for getting an amazing BOOK deal, way to go girl!!

Hoping to get into bed early tonight, going to shoot for a 6 mile run in the morning :).

Yum I love potato soup, but since I gave up dairy it's kind of difficult to eat it ;)

My small group did The Truth Project. I enjoyed it but really would love to do it again. It's so thought-provoking.
