Summer Muesli
This morning broke my Green Monster streak! Last night I prepared a wonderful bowl of Summer Muesli :)
What is Muesli?
Muesli is a cereal made from toasted whole oats, nuts, fruit and typically wheat flakes. Since it uses whole grains, it is high in dietary fiber, and because it relies on the natural sweetness of the fructose in fruit, it is also low in sucrose. Depending upon the proportion of nuts, it can also be relatively high in protein, unlike most other breakfast cereal.
Oats can be soaked overnight in juices or water instead of being toasted fresh. Newer additions to the ingredients in this cereal are constantly appearing. Different fruits, like berries and grapes, or tropical fruits like mangoes and bananas, are added. The addition of coconut flakes and macadamias can convert this cereal into Hawaiian muesli. Some people add honey or even chocolate to their homemade versions.

My homemade version:
Ingredients:
1 cup rolled oats, 3/4 cup soy milk, 1 tablespoon honey, 1 to peach, peeled and grated, 1/4 cup slivered almonds, handful of dried cranberries, 1 cup low-fat yogurt
Directions:
1. Combine oats, milk and honey in a bowl and let soak in the refrigerator overnight.
2. When ready to eat, top oat mixture with peaches, almonds, a dollop of yogurt and a tbsp of nut butter.( I added the Greek yogurt after I took the picture).
This was cool and refreshing, the perfect fuel after a 5 mile run this morning! I can’t wait to make some more :).

Thanks for the definition and recipe for muesli. I wasn't quite sure how it was different from granola. Now I know and can't wait to try it.

That looks really good and light too. Sometimes oatmeal sits "heavy" in my stomach in the summertime--so muesli could be the answer for me!

mmm i have been off and on with oats lately, but that really sounds very refreshing rather than hot oats!!
