Wonderful Ending

Oh Happy Friday! Last night’s Potluck/Pool party was just what the doctor ordered! After 4 days of cleaning and moving I just want to relax.

I brought some veggie enchilada’s, a new favorite! These are super easy and cheap! All you need is black beans,corn,onions,olives,tomato sauce,enchilada sauce, corn tortilla’s, and cheese. First you layer the bottom of your dish with the two sauces mixed, then layer with 6 tortillas(like lasagna noodles). Then you put the black beans,corn,olives, and onion mix together on top of the tortillas. Layer with cheese, and repeat! The top layer is just tortilla, sauces and cheese. The spread was wonderful, plenty of casseroles and lot’s of sides.

I filled my plate up with veggie enchiladas,fruit salad, potato salad, and some corn bread. It all tasted amazing! My Thursday night group sure knows how to cook.

Almost everyone showed up!

I definitely left room for dessert! I am not huge on sweets but I love me some ice-cream!

5  I had one small scoop of Snickers Ice-Cream, a small homemade cookie, and a little Funfetti cake! mmmm…Life is good!

We spent the rest of the evening in the poop, and hot tub chatting away. I spoke with some friends about doing an Olympic Triathlon in the Spring, they got me pumped! We shall see, I need to get my road bike first!

This morning I have boot camp, I am still writing out what were doing so I got to jet! I am excited because we are doing the boot camp at a park, which means more running and obstacles. I will let you know how it goes, and I have been reading some of my new book and I can’t wait to share!!!

P.S. The Little Bro passed is driving test, another teenager to look out for this summer;)

I think it is awsome you want to get a roadbike and race! I wish we had more cyclist bloggers :] running is great, but I'm looking for a roadbike too ... ;]

If you do decide to do the triathlon, please post about it! I'm also considering the transition from running to triathlons, and would be very interested to hear about your experience.

Oh, and could you send me some of those enchiladas too? I just about ate my screen. :D

Funfetti cake is my husband's favorite cake in the world. It's good but definitely not the greatest. Every year for his birthday he has me make the funfetti cake. I am SO ashamed when I am making him something out of a box but well...I guess it is his birthday and he gets to chose!

I so need a hot tub!

And you can definitely do an Olympic triathlon. I have done numerous. They are incredible!

Your bootcamp class looks like it's so much fun and challenging! Good Luck!!! I need to try out that enchilada recipe sometime. It looks ravishingly delicious. Do you know if we can freeze it too?
