Take Me to the Bayou

I can’t believe it is already going to be July, which means summer vacations, anniversaries, symphonies at the bowl, and lots of beach trips!! I love living in California because summer to me, means living outdoors!!!

Hubby and I are going to be quite busy this month! This Friday we are going camping with my family for the 4th of July and then the day after we are staying up at Forest Home for a week of Family Camp :) That’s not all, then we have our 2 year anniversary coming up and Hubby and I will be in the mountains for a get-away weekend at the end of the month! What a fun and exciting time!

This morning I woke up and wanted to stay in bed longer, not because I was tired but because I was soooo comfortable!!! I did manage to get going and had a wonderful Green Monster to start my morning off right! Before we headed off to church I was able to cross off quite a few things on my task list.

I did get to wear one of my favorite dresses this morning :) I think I would wear a dress everyday if I could!

Church was great and as soon as we got home I knew exaclty what I wanted to make for lunch. Ever since I saw this post, by Kath, I have been dying to try it myself :) This was my first time ever making Croque Monsieur, it originated in France as a fast-food snack served in cafés and bars. I have had one, once at Disneyland of all places at the Blue Bayou.

I followed this video for the recipe: Croque Monsieur Video, but I only have whole wheat bread on hand so I substituted.

They turned out amazing even with ww bread!!!

Each sandwich had 2 slices of thinly sliced deli ham, 1 slice Swiss cheese, Dijon mustard, and was dipped in a batter of 1 whole egg and 1/4 cup milk .

I normally never eat ham, but for this sandwich I made an exception! On the side I dipped my sammie into some homemade pomegranate jelly! At Disneyland they had some kind of jam on the side for dipping so I knew I had to have some too! Holy YUMMERS!

It was the perfect lunch. I have some cleaning and baking to do and then I am teaching kickboxing, I so just want to take a nap ;) Gotta run!

See you for dinner!

I think we all have at least one dress we could live in! I'm in mine right now. Love the idea of dipping your sandwich in jelly. Mmmm...sounds good!

That's the Monte Crisco sammy!!! Hubby and I share one every time we go to Disneyland. We always make reservations at the Blue Bayou just so we can have it. I'm going to have to try your healthier version asap! They use blackberry jam at D-land.
