Goat Cheese Makes Everything A Little More Fancy

I almost didn’t make it to the gym tonight, but knowing that I had a power snack to get me through, I made it in. The fuel I had before I went:

Thomas Mini WW Bagel with Naturally More PB, and some SB’s. Love this with banana’s better.

TRACK WORKOUT

I was afraid it might rain tonight so I went to the gym to do my track workout. I ran a 1 mile warm up, and then did the following set:

  • 2X200’s- at a 7:20pace, with a recovery 200 in-between
  • 2X400’s-at a 7:20pace, with a recovery 400 in-between
  • 2X800’s-at a 7:20pace, with a recovery 800 in-between

Then I did a one mile cool down. I also did some ab work while I was at the gym, I love using all the fun equipment! I have a little something to share with you all but I will be brief, this run and the past two have not been so SPECTACULAR. My feet have been giving me much pain, but not enough for me to stop. I figured if I never talked about it, it would just go away, but it hasn’t!!! The sad thing is, my legs and feet were doing fine before I went out and got NEW shoes, and these shoes are basically what I have always run in!!! I don’t understand, I am hoping with a good sports massage and taking it easy these next couple days the pain will go away!

DINNER

My dinner tonight was inspired by Heather’s dinner. It was compilation of everything I had the fridge.

Covered in sautéed spinach, tomatoes,mushrooms,onions,garlic, carrots, and I can’t remember what else.

Here is the best part, I grilled BBQ Tofu on the Foreman, and topped it with some light Goat Cheese!

This was AMAZING, I love goat cheese on anything but I have never had it like this. I felt like I was fine dining tonight, alone, Hubby’s working.

I also baked like a mad women in the kitchen, can’t wait to show you what I was working on. My whole evening was spent in the kitchen, cooking, baking, and cleaning. I haven’t spoken a word since I got home, I have been all alone for the past 4 hours!!!!

When was the last time you were silent the entire evening?!

Night friends, I have a 5 am wake up call for a 4 mile run in the morning. Crossing my fingers that the rain holds up.

Are you a rain or shine kinda runner?

I really like raining when it's drizzling out and not too cold! I think I'm a rain or shine runner but definitely not a hot or cold runner! I hate running in cold weather... I'd rather do a 10 miler on the treadmill than outside in 30 degree weather. It also really helps to meet someone to run that way you feel bad not doing it! I think that's the best way for me to get out the door..

And your dinner looks really amazing!!

ahh - i've never tried goat cheese but i feel the same about feta!

I agree, goat cheese is amazing and turns any dish into a fine dining delight.

You've been doing so well throughout lent but now that its almost over, have you decided what your first "sweet treat" is going to be?

Bobbi-

I had some foot issues a couple of years ago and I got some shoe inserts that helped a lot, eventually I had to get some orthotics and saw a night and day difference. I only had to wear them for a couple of months, but the foot pain has never come back. Do your symptoms sound similar to plantar fasciatis (sp?)?.

Your dinner looks fabulous. Did you season the tofu with anything?

I'm definitely a sunshine runner. Because I have a gym membership, I don't go running if it's the least bit cold or rainy - I'm a wimp :-)

oh no!!! i totally feel your pain-- i had SO MUCH TROUBLE finding a sneaker this past time around. what was the last sneaker that worked really well for you?? great speed workout! i love hearing about these :)

Ahh...the bobbi journey always gives me a kick in the butt! All I need is my cup of coffee and I am ready to go! :)

I'm sorry about your foot pain. Dang, maybe you need to check another running store since the other one seems to be a butthead and your shoes still aren't working. :( I'm so so sorry.

Bummer about the feet!!! Maybe try rolling them over a tennis ball (like a foam roller treatment)?

I hope your feet feel better!! The dinner looks delicious! I guess I am more of a "sine" runner. I will run in the rain in the summertime as long as it's not storming. My big downfall is the wind!

I don't mind a bit of rain, but when it's pouring, I usually stay in side. Never tried tofu on the Foreman...definitely going to try that out!

I like running in the rain :) I did a tempo run in the pouring rain once and it was so fun!! A long run in pouring rain might not be so fun though.
