Her Thursday Things to Talk About: A winner and a contest!

We have a winner folks!!!! Instead of using random.org, I thought it would be fun to ask Hubby (AKA MATT) to pick a number between 1 and 181. He chose 17!!! Which means Allison from Green Dog Wine has just one a brand new Camelback water bottle. Congrats Allison, please send me your full name and address. Thanks to all who participated! If you keep reading this post you will see there are more free things to come!

DATE NIGHT

Wednesday nights are the best times to have date nights. It’s right in the middle of the week, so it gives me something to be excited about! Last night I had a lot of studying to do so I asked Hubby if he would make dinner for the two of us. This is probably the second time in our entire 3 year relationship that he has cooked dinner. (I like to cook so I don’t mind).

Boy was I surprised he made the best and healthiest dinner EVER!!! I was so proud, check it out.

Cold Chicken Satay Noodles

Salt
1 pound whole wheat spaghetti
1/4-1/3 cup smooth or chunky peanut butter, softened (eyeball it)
2 tablespoons honey
1/4 cup warm water (eyeball it)
1/4 cup tamari (aged soy sauce)
1 clove garlic, grated with microplane or box grater
Juice of 2 limes, zest of 1
1 teaspoon hot sauce (eyeball it)
3 tablespoons vegetable, peanut or sunflower oil (eyeball it)
2 cups store-bought rotisserie chicken meat, skin removed and thinly sliced
A handful of shredded carrots
4 scallions, thinly sliced on an angle
1 cup spinach greens, thinly sliced
1/4 cup chopped peanuts, available in small pouches in the baking aisle
2 tablespoons chopped cilantro or flat-leaf parsley, whichever you prefer

Bring a large pot of water to a boil. Once boiling, salt water liberally, then drop pasta in and cook to al dente. Run cooked pasta under cold water to cool. Drain well and reserve.

While the water is coming to a boil and the pasta is cooking, whisk together softened peanut butter, honey and warm water in a large bowl.

Once they're combined, whisk in the tamari, garlic, lime juice and zest, and hot sauce.

While whisking continuously, pour the oil in a steady stream to complete the dressing. Add noodles, veggies and peanuts to the bowl and toss until everything is mixed well. Place noodles in shallow bowls and top with chicken and cilantro or parsley.
Yields 4 servings

HER THURSDAY THINGS TO TALK ABOUT:
RUNNERS ROAD RAGE!

So for Christmas I got a Road ID from my momma. I didn’t even ask for one, she’s the best.

december27th 002 “Meet your new training partner. The stylish little guy is extremely durable and comfortable—never mind the fact it very well might save your life someday. Wear it running, cycling or swimming. In fact, make a lifestyle statement and wear it all the time. The WRIST ID is the perfect piece of gear for every athlete. Like all our IDs, it can be laser engraved with your emergency contact information.”-ROAD ID

I wanted to talk to you all about road safety and how important it is to be aware of all your surroundings when running! Here are some wonderful tips I found to stay SAFE on the ROAD!

To avoid accidents or close calls when running on the roads, follow these safety guidelines:

  • Make sure you're visible. Even when you're running during the day, you should wear white or bright-colored clothes. If you're running in the early morning, night, or dusk, make sure you have reflective gear on. Although some running clothes and shoes already have reflective pieces on them, it doesn't hurt to add more.
  • Make eye contact. Remember that many drivers aren't paying attention because they're listening to the radio, talking on their cell phone, or reading a map. Don't assume that drivers can see you or that they'll let you go because you have the right of way. Be sure you make eye contact with drivers at street crossings before you cross.
  • Run against traffic. You want to be able to see cars coming at you.
Have any of you ever had problems with drivers while running on the roads? What do you do to stay safe when running on roads?

WRAP UP

Alright folks, stay tuned because later this afternoon I am putting up another CONTEST!!!! Have a great Thursday!!! I have AKB tonight, Thursday night group and then some major studying!!!!

i've heard foam rollers are great, but i don't have the first clue on how to use them? do you have any idea?

how sweet of your mama to give you that as a gift!

one time, i was taking a leisurely stroll around my neighborhood, which is full of moms in big, expensive SUV's on cell phones.

i had my ipod in, but i heard this really close and odd whirring sound. i looked up, just in time to see this range rover backing into me. i jumped out of the way (had i been a second slower, she probably would've made a pancake outta me), and it wasn't until she was fully backed out and saw me on the side of her car did she suddenly realize what happened and freaked out.

i had to tell her that it was okay, no problem, that i was fine and smile at her before she was willing to leave. she was on the cell phone with her friend and was probably really freaked out that she could've hurt someone. it's okay, people make mistakes.

your hubby g;asdjfa;sggg oh my gosh so sweet. make sure i marry a man who will cook for me, too! :)

I got that RoadID for my Dad a few years ago, definitely a smart thing to wear! I always, always make eye contact with drivers if I am going to cross in front of them, esp. drivers turning right and only looking left for oncoming cars and not runners! Only takes one dumb driver not paying attention...

I love the satay noodles - go husband.

What are your thoughts on headphones while running.

I like your date night idea. My husband used to do all the cooking in our house and perhaps that is why I gained the amount of weight I did.

What is the consistency like for the oat pancakes? I am nervous about the cottage cheese. They do like great though!

I love my Road ID--so much that it's worn out and I need a new one.

Ooh, I'm so jealous of your husband's cooking skills. I should tell Harrison to beef up his cooking repertoire with satay noodles because they look delicious!

My mom bought me a road id too because she was worried about me running alone! At least they care about us right?

Winner winner chicken dinner! Hooray for hubs! :D

Love Road I.D.. I have their shoe pouch (awesome and not expensive!) and the little clip-on blinking lights.

I run against traffic and I run without music. I want to be able to hear my surroundings and if someone is getting close to me. I run alone so I'm not taking the chance of someone trying to get squirrely with me. I do need an ID bracelet though.

HAve you thought about writing (and photographing) a cookbook? You could totally do it. you could even start selling them here at first! I would buy one in a second.

I love my road id. I have the ankle band. I still wear it even though it has my Miami address on it. At least my husband's cell number is the same.
