Her First Mid-Day Post

Mid day post is a new for me, it will be short as I still have to finish wrapping hubby’s presents before he gets home.

This morning, I took Bosco for a 2 mile walk, and it started to rain so it became a little bit of a jog! I teach AKB tonight so I try not and doing anything to intense. When we got home I made such a comforting bowl of Pomegranate Oats ( My first for the DAY).

The Combo:

1/2 c oats
1/2 c water
1/2 c skim milk
1/2 sliced banana cooked in
a little cinnamon, vanilla and nutmeg
2 tablespoons of canned pumpkin
handful of pecans and dried cranberries
1 tablespoon mini chocolate morsels
1 spoonful of Pomegranate Jelly

MMMMM….loved it! The Pomegranate Jelly added just the right amount of sweetness. It so nice to take my time and cook my oats on the stove instead of in the microwave, THEY TASTE WAY BETTER!!!!

and look hubby organized a spot in the cupboard for my special oatmeal dishes and toppings!!! HES THE BEST!

The rest of the morning I finished cleaning the bathrooms, and mopped and swept our bedroom. As soon as all the cleaning was done I got straight to baking!!!! I made three loafs of bread, 2 banana, and one pumpkin cranberry pecan bread (kinda made this recipe up myself).

I am currently taking a break from baking and eating lunch. I made a very interesting lunch today, because I am home and able to use the oven I finally made the three things I have been craving to make!!! Sweet Potato French fries, Kale, and an egg salad sandwich!!!! What have you been craving?

lately i've been craving butternut squash fries.. i could seriously eat them everyday!!! i wrote back to your question on my blog on how to make the fries- just crinkle cut, spray with nonstick spray, season with sea salt and pepper and bake on a cookie sheet at 425 for 35-40 minutes flipping halfway
hope you have a wonderful night!
