This Saturday was wonderfully productive, but I must back up first to Friday before I talk about all the excitement.

HER FRIDAY NIGHT RECAP

After work I headed straight to the gym trying not to get distracted, I knew that the treadmill was there and I wanted to flee!! But I kept focused. I am so glad I did because my run was SUCESSFUL!

HER Workout:

Day 3 of Boston training:

Goal: 4-5 miles with a tempo run (and other stuff but you got to buy the plan to hear the rest).

Stats:

  • Distance: 5 miles
  • Time: 40 minutes
  • Calories Burned: 650
  • one mile at 7:40 HARD!

I think because I had a plan, purpose,and it wasn’t just running for the sake of running it made it easier. I was proud of myself, and I think that I will be able to do my Friday workouts at the gym.

Before the gym I had one of my WEIL Bars, Goji Moji from Nature’s Path, and it hit the spot. Tasted like a fruit roll up, soft and bursting with flavor. I could taste all the cranberries and dates baked right in. It was small, but with only 170 calories it was perfect! dr_weil_goji_moji_pure_fruit_and_nut_bar_productlarge

INGREDIENTS: Organic dates, organic fig paste, organic cashews, organic dried sweetened cranberries (organic cranberries, organic evaporated cane juice, organic sunflower oil), organic goji berries, organic dried orange peel, organic lemon juice concentrate, organic orange oil.

When I got home from the gym I had some leftover Chicken Pot Pie with a Cornbread Crust from last night. Then took off to Sbux to have tea with my friend Teracita. It was refreshing as always and before we knew it, it was 11pm and we both had to get up early this morning!

SATURDAY HAPPENINGS

Alright finally back to today!

My fuel for the brain at 6am, a mix of Kashi Almond and Flax, with Natures Path Peanut butter Granola. Topped with strawberries and half of banana, with soy milk and a spoonful of AB.

I had my 8am A&P Lab, it was pretty easy because all we did was go over the syllabus, same as yesterdays lecture. I was out by 8:30am, but stayed around to talk to a girl who lives right near me and is going back to school to be a nurse, future study buddy!

I felt so productive this morning, I ran an errand for hubby,went to TJ’s to get this weeks groceries, deep cleaned the kitchen and dining room, and made some home-made hummus!

I was excited to find the Tofurkey, it inspired our dinner for this evening.

After I put all the groceries away. I made the BEST LUNCH. I can’t quite tell you to much about the homemade hummus part, but let’s just say it will be worth the wait;)

I made a large fruity salad topped with strawberries, oranges,pom seeds, and some Snacktrtion trail mix (there is nothing like white chocolate in your salad).

and I had a bit of Lavender chocolate for a little Saturday treat! This was very interesting because it actually tasted like Lavender!!!

This afternoon Hubby and I headed out to a local park to celebrate our dear friend Lisa’s birthday. We laid in the sun, it was 78 degrees not meaning to brag, today and played some Bocci,Ball, an easy and entertaining game.

Then we came home to make dinner, a little carb loading for my long run tomorrow!!!!

  • 1 pack of whole wheat spaghetti noodles
  • 1/2 a package of Balsamic Vinegar Veggies from TJ’s
  • 1 jar of TJ’s classic marinara sauce

Ok I know these pictures look yummy but I have to say I really did not like the Tofurkey it wasn’t my favorite taste, and I usually like everything. Hubby on the other hand LOVED it, that is a first ever!!!! I ate most everything else and picked out the Tofurkey. HAS ANYONE ELSE TRIED THIS STUFF???? Let’s just say I won’t be making this anytime soon.

Look what came in yesterday!!! I am so excited to do this tomorrow, tomorrows the first day of the Sexy Sick Pack Ab Challenge . I took a picture of my abs last night so that I will have something to compare my tummy with in 30 days it will be interesting to see the results.

WOW that was a long post…man a busy Saturday and did I mention I have MONDAY OFF!!! Love being a teacher:) That is one thing I will miss when I become an RD, the school schedule.

Well I have a 11 mile run tomorrow morning at 6:30am with a local running group it will be tough to get out there that early but, if I don't make it I will have to run alone NO FUN! I haven't run a long run since THANKSGVING DAY! I am catching up on all your blogs can’t wait to hear how your weekend is going!!! Anyone else have a 3 day weekend?

Comfort & Joy!

We had yet another fun filled Saturday of Holiday events, this post will be full of lots of comfort and joy!

RECAP OF SATURDAY MORNING

I went to AKB yesterday and burned like a million calories! My total HBBC points 37.75 to this day, Michael is an amazing teacher and always pushes my body to the limit. When I got home I made another breakfast cookie, but this time I use banana protein powder, it was perfect!

SHOP TILL WE DROPPED

After breakfast hubby and I set off for a full day of shopping ( don't I have the best HUBBY)for Christmas presents. Hubby did not have breakfast, so of course I had a LARABAR stashed in my purse for him. He tried the Gingersnap, ( I don't like ginger he loves it) he said that the bar needed 1.7oz less GINGER, in other words there was too much ginger in there for him.



The first outlet we went to was ok, we walked around for about 2 hours and then got some lunch at the ONLY eatery they had there. They had a lot of options, healthy and unhealthy. Everything looked really good. It was 3pm and we were FAMISHED. I still went with a lighter option, a Thai Wrap with Thai chicken, peanut sauce, jasmine rice, and cucumber salad all wrapped up in a whole wheat tortilla with a spa salad on the side. I could have just had the salad, it was so good ( I ended up eating only half the wrap). There was grilled squash and zucchini on top! They also had a FLAVOR bar, and if you don't know this I AM the CONDIMENT QUEEN! So I got some BBQ sauce and Cilantro dressing. I just dipped my wrap in them trying to avoid to many empty calories.






We only ended up getting two things at the outlets then took off to hit the next mall. O and while we were there, they had a buy one get on FREE Churro, so we just had to get one. This was by far the biggest and best churro I have ever had. The dough was gooey, warm, and sooo fresh.

Why would ANYBODY BUY THIS!!!!!



At the next mall we SCORED. We found some great gifts for the secret Santa exchanges in both sides of the family, and we got something PERFECT for the FIL! By the time we got to the last mall it was 7pm and we were started to drop, but we made it through got some great gifts for my brothers, my parents, and the hubby and I split up and did a little shopping for each other (I got some great stuff for him he's going to LOVE it!).

When we got home is was almost 9pm and we were SO ready to EAT! Thankfully the pot roast took 11 hours to cook so when we got home it was cooked to perfection. I am not a big red meat eater, actually I could probably live without it this meal was solely for the hubby who is a meat and potato kind of guy (he's from the south of course). This was my first time making Pot Roast (my NEW THING FOR THE DAY) , and it was successes the meat was so tender and the potatoes and carrots were not too soft, just done enough. We could tell the carrots were from the Farmers Market, they tasted do much better then the store bought. I wonder if I could slow cook butter nut squash??

After dinner hubby and I curled up on the couch watching the movie Jack Frost, but after about 30 minutes WE BOTH fell asleep and I woke up an hour later so disoriented...lol...LONG DAY!

SUNDAY MORNING BAKING

I woke up at 7am this morning ready to bake for my Christmas Cookie Exchange Party today. I just went ahead and baked the OOOO so amazing Oatmeal, Chocolate, and Pecan Cookies I made last week. Their so easy and stress free! Thank you all for the wonderful recipes and cookbook ideas! Maybe one day when I get a Kitchen Aid Mixer I will get more creative:) I also attempted at some of KATH's Baked Oatmeal Snack Bars, I didn't have banana chips or walnuts so I used craisens, raisins, and almond trail mix. I think this was a pretty good attempt; I have some great ideas for adding next time! I also had a little waffle banana and peanut butter sandwich on one of my NEW plates I got yesterday from Pottery Barn!


I am a little worried about the Cookie Exchange Party, I know it will be fun but ALL those cookies how do I NOT EAT THEM ALL!!! I will be drinking a lot of water and having a healthy lunch before I go to ward off any overeating!

Menu and Work out schedule for the week ( 4.5 day week of work!)

FRIDAY FUN POST #2

Today in History: My beautiful Co-Worker Nicole was born into the world, Happy birthday Nicole!!!!

YES it’s Friday, the day we have waited for all week! Is it just me or did this week seem like it when on forever and ever?

RECAP OF LAST NIGHT

We met up with our Thursday night group and went to the Farmers Market here in town, it’s at night which I know is unique to our little town. We had so much fun, watched the carolers, shopped for breads, shopped for produce, and had some hot chocolate afterward. I didn’t get too much there, just some carrots (for the pot roast I am making today), a mini butternut squash and some sourdough bread (for the hubby of course).


Before we left I made this beautiful Cranberry Salmon Salad!



MORNING WORKOUT

Today I ran 4 miles and did a great push up, ab, and weight work at home. I need to go the gym next week!!!! Great run, it’s a little chilly here in So Cal, and we hear there is SNOW in our forecast for next week!

I made another wonderful bowl of oats (no pic sorry)

I am also making a Pot Roast for dinner tonight, well the crock pot will be slaving all day and I will enjoy tonight!!!! This is my first attempt at ever making Pot Roast, but it’s the perfect food for this gloomy weather.


HOLIDAY BOOTIE BUSTER CHALLENGE UPDATE!

Yesterday was an off day, but I still got in some walking to get in those points! While I was walking I read some of my Runners Magazine, I LOVE multi-tasking!!!!

While I was reading I saw that Rick Trujillo (Trujillo is my maiden name) is in Runners Wolrd this month as this crazy mountain runner! I wonder if were related, I soooo need to check into that!

NEW THINGS FOR A NEW YEAR COUNTDOWN

December 11: I ate a Persimmon!!! I have never had one of these and they had them at the tasters at the market so I of course tried it, yummy! I guess you can bake with them???

Well I am off to work, going to be a busy day we are making Gingerbread this will be a first for me! Tonight we are going to a Christmas Concert with some friends and then tomorrow hubby and I are in for a full day of shopping and baking ( I know Hubby is THRILLED). DECISIONS DECISIONS

On this day in History: Decmber 4th 1816 James Monroe of Virginia was elected the fifth president of the United States.

So last night as we were going to bed I made the decision not to go to spinning class this morning. I am going to do AKB tonight and I am still pretty sore from yesterdays run, got to listen to the body.


For breakfast I made a Bowl of SNOW:

the combo:

1/2 c oats
1/2 c water
1/2 c vanilla soy milk
1/2 sliced banana
handful of hemp seeds for protein
handful of crushed walnuts
1/8 nutty banana boom PROBAR
sprinkle of coconut (SNOW)
drizzle of agave nectar
and a spoonful of apple butter

with my peppermint mocha coffee and a shot of Monavie

SHOPPING TIPS
BIG DECISION
I decided not to run the Holiday Classic 15 k this year. I am kinda sad about it but at the same time I know its best. Its $40 dollars for this race I didn't realize that until yesterday, and we could use that to buy people we love gifts or shoot even donate the money. If the race was for a cause I might think about it but it's not. Also we have two party's on Saturday night and I don't want to worry about having to leave early because of the race on Sunday morning. So I decided that I will do my own 15k from my house on Sunday! I should have hubby make me a banner that says FINISH...lol...just kidding.

Well folks I am out here, I have a busy day ahead and I still have to mop and sweep the floors this morning for our couples study tonight! Have a Terrific Thursday!

Birthdays and CONTEST REMINDER!



Today in History: December 3rd my Daddy was born, my friend Justin was born and I ran my first Marathon in Memphis!


Yes I did it!!!! Woke up at 5:30am (hubby set the alarm for 5:30 not 5:15) and jumped out of bed! Hubby had my coffee read, thanks hubs, and I drank it with a piece of whole wheat toast and Pb. I then headed down to my running trails, and did a wonderful 5 miles in the 47 degree weather. At first I was real cold, and then I thought of Lance, "If you need to get warmed up a bit - think of me - snow falling, temps in the 20's - I'm sure you'll forget all about 48 feeling cold!!" and I started running hard. I took the first three miles easy to warm up my tight and sore legs. My legs are real sore the front part of my hammys are killing. I think it is from all the squats we did in class on Monday. Once the legs were warmed up I picked up the pace and shredded off 5 minutes of my turn around time.

Time: 44:55
Distance: 5.08 miles
Avg Pace: 8:49
Max pace: 6:30
Total Calories burned:602

My goal is to beat my mileage last month, at least run 50 miles!
In January when I start training for Boston I know I will start piling on the miles big time!

When I got home I made a bowl of Cranberry Christmas Oats:

The combo:

1/2 c oats
1 c unsweetened soy milk ( I like hemp better)
a dash of pumpkin spice
a dash of Cinnamon
1 tsp vanilla extract
1/2 scoop vanilla protein powder
1/2 banana
handful of dried cranberries
handful of Zoe's granola cranberry currents
handful of flax seed
1/8 cup sliced almonds
spoonful of Barneys Butter! man I missed this in TN:)

I love all the crunchiness! I also had the last small slice of my whole wheat french toast casserole. As you can see I had one more cup of coffee but this one was black.

BIRTHDAYS

Today is my daddy's birthday( HAPPY BIRTHDAY DAD) and my friend Justin's!!! It is also the day I ran my first marathon in 2005! For my dad's birthday we are having him over for an elegant dining experience with my brothers:) So I need your help! I want to make this a very special birthday dinner, I am coming up with a menu and going all out! Do you have any ideas what I should make?! I would appreciate anything!

CHRISTMAS CARDS

My goal is to get all the Christmas cards in the mail by Saturday. Seeing that we haven't taken any pictures I am not sure that will be possible but hubby and I were thinking about just putting Bosco on our card and saying HAPPY HOLIDAYS FROM THE MCCORMICK'S, keeping it short and simple. I know family's sometimes just send out cards with their kids on it, and sense Bosco is our baby I thought why not he is cuter then the both of us...lol...what do you think?

Tonight I have so much to do!

  1. take pictures of all the goodies I am sending to the POTM winners!
  2. make a NEW chicken pot pie recipe
  3. clean the house for tomorrows group
  4. work on Christmas cards
  5. make dads birthday dinner menu
