God is Good, Beer is Great, and People are Crazy
This title has nothing to to with my post, I just love this song and it tends to get in my head!!!
What a day, what a day! I was a little busy bee in the kitchen, but I am not sure why I chose to bake on a 100 degree day!!! I don’t mind the heat. but Hubby is dying!
So I decided to use the huge zucchini I received on Friday, to make zucchini bread and roasted zucchini. Since I was baking I also decided to make Tina’s peanut butter bars that I have had saved in my favorites :)
I first started with this light zucchini bread recipe from Cooking Light. I also added one mashed banana and a cup of chocolate chips to the batter .
In the oven they went with some chopped zucchini.
I tossed the zucchini with some pepper and olive oil and baked at 350 for 30 or so minutes(until golden).
The bread turned out fabulous!
It made two loafs so I took one to my Mom’s house, I know my bro’s will love it!
On to Tina’s bars! This is such a simple and easy recipe:
Ingredients:
- 1.5 cups old fashioned oats
- 1/2 all-purpose flour
- 1/2 cup agave nectar
- 1 egg
- 1/2 cup smooth peanut butter
- 1/2 cup chocolate chips (optional)
Coming out!
I was so eager to try them, I had one right out of the oven. Each bar has approximately 137 calories (without chocolate chips).
It was the perfect pick me up for my kickboxing class tonight! My little bro Robert Aaron came with me to class, he said I am a “monster”, I try! He did love the class and he kept up!
When i got home I decided to make some Thai food. I have never attempted to make Thai food at home but I have had this packet in the pantry FOREVER! It was about time I tried it out.
First I stir-fried all my veggies:carrots,zucchini(of course)and onions. Then I added in tofu and cooked until it was golden.
I added the sauce at the end.
Topped on a bed of ww rice! Oh my goodness this was SOOOO spicy! I was sweating while eating it :) It was very good though and I have plenty for lunch tomorrow!
I love THAI FOOD!
Ok it’s time to actually sit down and relax for the evening, after I clean up the kitchen. I barrowed the first Transformer movie from a co-worker, can’t believe I am going to actually watch it :) I am sure there will be some zucchini bread in my mouth in the near future!

Your bread looks great! The bars also look very tasty and easy. This might be something I could actually bake.

Your baked goodies look fabulous! My mouth just watered a bit and I may or may not have drooled on my keyboard when I saw that fresh from the oven zucchini bread.

Funny that you made thai red curry, that's what I have on the menu for dinner tonight...I love thai food too. :) Especially the raw salad rolls, I drool just thinking about them.
