Make A Difference Monday: MLK Day
Yesterday turned out pretty productive, I still have half my to do list to cross off but I am hopeful to get most of it done today. I wanted to make something new last night, so I dug through what I had on hand and came up with a Sloppy Potato.
Ingredients: 2 small bakes red potato’s, cooked turkey meat, a can of tomato paste, a can of black beans, McCormick sloppy Joe seasoning, and a little Colby cheese. It tasted amazing, I love the protein/carb/fat mix":) I felt satisfied, but not too full.

MORNING EATS
I have today off, so I slept in till 8am and decided to start the week off with a wonderful bowl of oats. Hubby went off to his first day on the new job, I made him a lunch and sent him on his way. THE WHOLE HOUSE TO MYSELF!!!
I wanted to make something a little more fun but Oats sounded so good.
I made them over the stove KERF style. Threw in half banana while cooking, some pumpkin spice, a little brown sugar, and some flax seed. Then topped with 1/4 of an Honest Food’s Chocolate Peanut Butter Squares, my favorite( I smashed up in a zip lock bag), check out OhSheGlows to win some for yourself!!! I also threw in some chopped pecans and sprinkled with coconut in honor of the cloudy day were having.
Of course I had a spoonful of AB:)
I sliced up a fresh orange, for some reason these oranges are so messy to peel. Anyone else ever have that problem?
With a cup of French press coffee, black (still keeping to the no creamer for the year).
I am currently watching the Today show, man can’t believe the inauguration is right around the corner!!! Yesterday I did my first 30 day Shred Workout with Jillian on level one, and it was great!!! SEXY SIX PACK here I come:) I need to use more weights so I am glad she incorporates them. I am a huge believer in mixing weights with cardio, I love getting my heart rate up and down, that’s why I love kickboxing!!! Too bad my Garmin couldn't tell me what my HR was, it’s officially broken. I am on the hunt to get a new one( which means I have to pull from my bike fund) !!!! I am not going to get the new one, I like my Garmin 305.
MAKE A DIFFERENCE MONDAY: MLK DAY
I thought it would be appropriate to share a little bit about Martin Luther King, Jr. (January 15, 1929 – April 4, 1968), someone who has made a difference for our world today. Who was this man and why do we have a day an honor of him? When I lived in the south this Holiday felt more celebrated more real, then it does here in the west. King was assassinated on April 4, 1968, in Memphis, Tennessee for his beliefs. He was a preacher and an advocate for truth and justice.
King was a peace maker, a man who saw no color, but only wanting people living together in harmony. He spoke volumes about change and unity. He wanted people to truly give up all their hate for one another because of race and differences. Segregation is still so prevalent all over the world, we need to remember King’s passion and do our part in being reformers. They are many peace makers in our history, but I believe that we can all be peacemakers in our world today. What is your dream?
Please take 10 minutes out of your day watch and remember his infamous King speech, “I Have a Dream” .
WRAP UP
The rest of the day I will be cleaning, running errands for the hubby, reading for A&P, doing some light yoga, doing a blog video, and teaching AKB tonight. Have a beautiful Monday wether your working or not, do something nice for someone else it will make their MONDAY!!!!

Yay I was teaching my kids about The M.L. King Day this morning! They are really unaware of his story, being from Europe and all, but they were interested!!!
Yay for the 5D! I haven't met many others who have it...its such a great camera.
And, we have the same french press!
I need to try the 30-minute shred...I keep seeing it pop up in blogs. Sounds like a great workout!

Sloppy potatoes look AWESOME! I will have to try them.
And I have the hardest time peeling oranges. To make it easier, I cut off the navel and stem ends and then cut down the "longitude" of the orange. Those pieces are easier to peel off that way!
I know a lot of people who are having issues with the new garmin. Most people seem to prefer the 305. Still stinks that you have to get a new one. :-(
Potatoes look awesome. And well put with the MLK post, every year it seems to be more important.

What a great post - thanks for all the info about MLK - he was an amazing man, and so many people simply think of today as nothing but a day off from work.
Oats are never boring, and your's looked exceptionally tasty this morning! However, I'm having issues with the no creamer in the coffee thing...OK, more like feelings of jealousy. I so wish I could drink my coffee black, but I'm just not there yet...not even close. Good for you! I tried chocolate soy milk in my AM cup this morning. It was okay - not nearly as good as my half and half!
I love mixing weights & cardio. I used to cardio cardio cardio, but adding weights & yoga has totally transformed by body!

His dreams are beginning to come true...
